For the dough
-1 and 2/3 cup all purpose flour
-1 tsp salt
-1 cup ice cold water
-1 tbs vinegar
-1 and 1/2 sticks room temperature unsalted butter
For the filling:
-2 cups farmer's cheese
-1/2 cup crumbled feta cheese
-1 egg
-1 tbs semolina

      Thank you. You can keep it on the counter for 2 days and in the fridge for about a week. Not sure about the freezer. I never tried freezing it.

    Excellent tutorial, your end product looks fantastic and delicious. I'd like to know what system of water bath canning you learned from because modern instructions say to hot-pack the jars then water bath for 10-15 mins, rather than the cold-pack and longer boiling time that you've done here. I used to follow the hot-pack system (water bath for 15 mins), but a few years ago I switched to hot-pack and steam-canning for 15-20 minutes (same equipment, but using only steam to save time and water). I also understand that older generations (Amish, Italians and Eastern Europeans just hot-packed the jars, added lids and let the jars cool very slowly to achieve a good seal.

      @livmaher6527 thank you. I am romanian, so eastern european :) . This is the way we can back home, and honestly, no one ever uses a pressure canner for anything including meat. Some things, as you said, we hot pack them and allow to cool overnight without boiling the jars (usually jams and preserves), but other things we sterilize in water. Now I do use a pressure canner for beans and meat, so I guess I am combing my eastern European traditions with my adopted American ones :)

      The artisan one is supposed to be hard and crispy. You have to bake with steam at the beginning for about 20 minutes and then with no steam for 20 more minutes. Maybe you would like to try the soft one. I have that recipe already on my channel.

      Steam is very important with sourdough bread. The easiest way to achieve that is baking it in a Dutch oven with a lid. Keep the lid on for 20 minutes (and steam will automatically be created inside) and then remove the lid for the next 20 minutes. It's that simple

      You can knead this bread dough with the ank too. With the roller and scraper.
