Zucchini Lasagna Recipe:
1. Cut the zucchini lengthwise and boil for 1 minute.
2. Mix equal amounts of ricotta cheese, spinach, carrots, and your choice of cooked chicken, ground beef, sausage, or prosciutto. For a vegetarian version, skip the meat, and for vegan, use crumbled tofu with olive oil instead of cheese.
3. Sauté onions in olive oil, then add tomatoes for a simple homemade marinara. Adjust with salt, garlic, oregano, or Italian spices to your taste.
4. Layer zucchini and cheese mixture in a pan, repeating for 4 layers.
5. Broil for 10 minutes until brown, then top with your marinara sauce. Enjoy!
