砥石の養生って誰が何時から始めたんだろうね 子供の頃は見たことないし 刀の砥ぎ師もやってるの見たことない 自分も天然砥石其れなり持って使ってるけど 割れた事など一度もない 人造砥石の方がよく割れるけどね 天然砥石は水に浸けて置く物でもないし不思議だ
Unfortunately, I don't understand Japanese, so I don't know what this seasoning is for. But as far as I understand, red pepper is poured with heated vegetable oil, where aromatic ingredients such as ginger, green onions, citrus peel and black pepper were previously added. Surprisingly, I have seen similar sauces in the countries of the former USSR. For example, in Kyrgyzstan, near Lake Isskkul, I tried a local sauce called "lazy" or "lazajan". This sauce is prepared in a similar way. Take hot red pepper and mix it with a small amount of garlic. Then add very hot oil to this mixture. Cottonseed oil is used, but any oil can be used. The amount of oil is necessary so that the result is a thick mass resembling wet clay in consistency. This seasoning is used with meat, flour and rice dishes there. In another country of the former USSR, in Georgia, a seasoning called "adjika" is very popular. It also has a thick consistency, but also contains salt and herbs. There are variations of green and red pepper.

I watched your videos on preparing a whetstone with great interest. You are lucky to live in Japan, where the culture of sharpening various tools, such as knives, saws, etc., is so developed. At the same time, thanks to geological factors, there are whetstones of very high quality. A small defect on this stone is certainly sad. Do you think it would make sense to fill this place with epoxy resin, for example? So that the knife blade, moving along the surface of the whetstone, could not get damaged by a collision with a ledge? If organic material is not suitable in this case, then perhaps magnesia cement or another binder could be used? I also wanted to ask: how do you evaluate diamond stones? What is the difference in the results of sharpening blades with natural Japanese stones and diamond stones with a dispersion of diamond crystals of 1-0.5 microns?
Thank you for your comment. As for the defect in the whetstone, I’ve already fixed it by shaving off the sharp edge, so it’s no longer an issue. However, I believe epoxy resin would be the best option for filling the defect, as it wouldn’t damage the steel. Cement or similar materials seem likely to cause scratches. The interesting thing about natural whetstones is that the abrasive grains are not too hard. Typically, abrasive grains have a Mohs hardness of around 8-9, which is quite hard. On the other hand, many natural whetstones known as "Awasedo" are made from layers of silica or mica, which have a relatively low Mohs hardness of about 7. Synthetic whetstones tend to grind away not just the steel, but also the carbides in the steel. However, with natural whetstones, you can leave the carbides on the surface of the blade and only grind away the iron. This creates a micro-serrated edge that gives natural whetstones their unique cutting ability. I believe that since diamond stones, like synthetic stones, are very hard, they are unable to form this micro-serrated edge.

Indeed, steel containing hard carbides, such as high-carbon steel or alloy steel containing carbides of other metals, can wear out selectively when sharpened with an abrasive with a lower hardness than the carbides. As far as I understand, Japanese stones were formed as a result of the deposition of microparticles of silicon oxide ejected by volcanic eruptions on the seabed. Over a long period of time, geological changes occurred and these sedimentary rocks ended up on land, where the famous stones are now mined. Synthetic abrasive stones are made mainly of aluminum oxide or silicon carbide, there are also stones with diamonds, boron nitride or borides of various elements. Undoubtedly, these materials are harder than iron carbide or carbides of alloying elements. I believe that detailed studies of the cutting edge obtained from various stones, for example, using an electron microscope, would be very interesting. The scattering spectrum of secondary electrons from different areas of the material could help determine the chemical composition of these zones, the presence of carbides there and their nature. In any case, the practical results achieved by Japanese stones indicate their highest quality.

本当、砥石は大切にしないといけませんね!砥石がないと刃物は切れなくなり、ただの鉄の塊ですからね。どんな切れ物も砥石次第。採掘がほとんど終わってるなんて、本当にもったいないと思いますよ😢

Regarding the export of hazardous materials, the response from the exporter's FAQ is as follows: "The type of paint (oil-based or water-based) and the hazard classification if oil-based will vary depending on the destination country. However, administrative fees alone will cost a minimum of 30,000 to 50,000 yen. In addition to these fees, you will also incur costs for the paint itself, customs duties, packaging expenses, and export shipping costs." Therefore, I don't think that the store can import large quantities of products, so the prices are likely to be reasonable.

つまらない事ですが・・・ 塗布する前に、塗る面をダイヤモンド砥石等で「真っ平」にした方が美しく仕上がって良いのではないのでしょうか? それとも「自然」なままの方が良いとか? どうなんでしょうか?
1. 裏面の「皮」などを削り取ってしまうと、産地や層の手がかりがなくなってしまう。 2. 割れてしまうと悲しい。 3. 皮付きで側面に鋸跡がある状態の見た目が嫌いじゃない。 ので、私は研面以外は触りません。 もちろん、綺麗な直方体に加工されたい方はそのようになされば良く、砥石の所有者が満足のいくように好きにすれば良いことかと考えております。

ねこさん ありがとうございます。 赤唐辛子はカラブリア産のなので、結構辛いです。 この動画は2回目に作ったものなのですが、実山椒がかなりビリビリなので量を減らしました。 とはいえ、なんだか夏に良い爽やかさです。
