A pantry item that cannot be absent in a Mexican household is a nice jar of pickled jalapeños. So, let me share this simple and easy recipe so you can spice up all your dishes.
Ingredients:
350 g Jalapeños
2 Carrots
100 g Cauliflower
8 Garlic cloves
10 Pearl Onions
1 tsp Peppercorns
1 tsp Salt
1 tsp Sugar
1 tsp Oregano
3 Cloves
3 Bay leaves
2 c Water
2 c White Vinegar

I really like the Candlemas - tamales idea. You don't use the slap method of kneading with this? It would be great at the start of the process. Chain Baker has a video on the process on TH-cam.
I love anything relating to tamales hahaha. I did in the beginning, but sometimes it is better t to take a break for your mind's sake. The kneading part took me so long that I had to cut some and speed it up. But I agree that slapping is not just fun, but useful with wet doughs.

Dried shrimp are great! They are useful in many cuisines, and belong in every pantry. This looks like a great broth--IF you had any left over, wouldn't that make a wonderful treat the next day for brunch along with some rice. It seems you might have gotten a bit more lime in there than you planned on using. That's the sort of thing I manage to do, too. Happy New Year! (P.S. How about this as ramen broth??!!)
@@hollish196Absolutely, dry shrimp have many uses. I love to have the day after, but you have completely enlighten me! I can’t wait to eat it with rice or with ramen! I do love lime but I think that was excessive hahaha!

What a wonderful story for this recipe! Yes, the 1980's were different, but much better than even earlier days. These sound great. I love the press idea for these---I bet it would be great for pierogi, too. I recently make clementine jam, which seems to be almost the same as this. It is great for lots of uses--on meat, on toast, and in cheese sandwiches! (mild cheeses).

@@hollish196 😋 I like mac & cheese, with my corresponding amount of dairy chew 😝. Let me ask you, do you put some topping in yours? I like spices and panko.
@@PicaPocoKitchen Mostly I just add a spoon of mustard and a dash of Worchester sauce for extra flavor. Which mustard I use depends on what cheeses I have. I will use panko sometimes. Bell peppers diced up are pretty nice, if they are added after it is cooked. Like green onions on fried rice.

This is much easier than I thought, so it has moved up on the list of "foods to make!" Goat, when fixed well, is delicious! I wish I could get it where I live; I can't so I settle for lamb and beef. I can also get duck, so if you have any recipes that use duck, PLEASE share them!!
It is! LAmb and beef would work great. I know very few recipes for duck, when I find a good source I'll give it a try. ☺
@@PicaPocoKitchen Thank you! Duck is EXPENSIVE!! So don't break the budget just for this. Duck fat also makes super pie-type doughs. Just like goose fat.

Se podría agregar la mermelada pero en lugar del jugo de naranja, la cajeta no aporta mucho sabor, pero suma en el contenido de azúcar y grasa de la masa. Si quieres que integrar sabor puedes agregarla una vez hecho el pan ya sea como relleno o hacer un almíbar con ella y bañar tu pan.

is it possible to make the dough with a stand mixer? I have arthritis, and there are days I could not mix in the lard properly. If not, I just need to make them on days that allow this! :)
@@hollish196 Absolutely, mix the lard with the whisk attachment and the dough with the paddle, in slow and adding a little at a time. You don’t want to over-mix.

NOTHING can really replace lard. It is the Holy Grail of fats. Not even goose grease can match it. I find your use of coconut fat interesting. . . Is it common in areas of Mexican cooking?
@@hollish196 I agree! Coconut is common in Mexican cuisine, not coconut oil. That was my intention to provide with a “healthy” version of tortilla, some people don’t like to eat certain foods. Flour tortillas are traditionally made with lard, shortening, or butter and milk. I do have to say that these whole wheat/ coconut tortillas are quite tasty 😉.

Sometimes drying the nuts before cooking them helps to make them dryer at the end. True for any nut in any recipe---dry roast in a pan on low heat.

It's more easy if you put it in hot oil, boiled until the oil is red and thrown away the seeds. You can use the oil to color beans, rice and other foods.
