Sourdough in the Tovala

Trying a 3 lb loaf. Other than it starting to burn the ear a little early, it came out pretty well. I think this is the limit for this oven. I'll probably keep it to 2 lbs or lower in the future. This was baked with 100% Azure Standard bread flour at 75% hydration.

This is my first attempt at baking a sourdough bread in the Tovala. This was a small batard loaf around 450 grams. I preheated an unglazed clay tile in the bottom rack for 30 minutes at 450° then set a 2 stage cycle of steam @ 425° for 20 minutes followed by bake @ 450° for 30 minutes. I could tell that after about 12 minutes of the baking cycle it was done so I stopped it. Next time I'll adjus...

Tried this cooking cycle with Tovala. Indeed, the back right corner, even the right side, browns quickly, and I had to turn the loaf, too. It could have something to do with the location of the holes on the Tovala steamer, this is frustrating. The bread top was a perfect color after 9 min, but undercooked inside, maybe more adjustment is needed. I used the batard recipe from "The Larousse Book of Bread" by Eric Kaiser. However, I made one large instead of dividing the dough into 3 small batards.

Wow! So no mention of one "MR. Vivian Campbell"??!! Was a huge part of White snake during the bands lineup of basically,an all star lineup featuring: DC. Rudy. Adrian. Vivian. Tommy Aldridge. Ect.. ! Was very unfortunate that Campbell and DC didn't really see eye to eye, plus Campbells wife apparently had some personal issues too with DC. But I was fortunate to see that lineup in Cincinnati, and they fkn ROCKED!!

Outstanding, the band sounds the same as they did in the 80's, most underrated Rock Band of all time glad they are still killing it.
Bro, they do not sound the same as they did in 80s, not even close. That's not a knock on Zebra, but they are 40+ years older. I saw them twice in the late 80s and in 90. They released 3 (especially 1 & 2) great albums in the 80's and then nothing until 2003. I had a friend back then that was friends with the band and the reason for the break had to do with drugs. So the reason they are "underrated" falls solely on one member of that group.
