    Thank you for this video. I've been looking for a video with a small brisket flat. I'm doing a 3lb flat today. I hope it turns out as good as yours. Wish me luck.

    We followed this exactly (including injection) using heavy Montreal Steak Seasoning as the rub on a flat from SAMS on our pellet grill and it was the best brisket we have ever had. So tender and moist and flavorful. We all said we would rather have this again instead of steak. Good job Jack!!

    This is a great video, sometimes it stalls and u have to adjust ur schedule. Im about to try my luck at a 4lb flat

    I found out several years ago that small partial flats are just as much as a challenge as a full one, and it kind of blew my mind how stubborn it was. If you got your’s tender without drying it out you’ve definitely accomplished something, so congratulations!

    I'd stay away from any sugar until late in the cook... Other than that it sounds like you did everything right... Yeah 275 is actually right once you complete the early smoking at 180 to 200 for an hr or so... Good Job.
