Limoncello
You won't believe how simple this is to make. And you can control the sweetness and choose the lemons you use to make it. I like it a little less sweet than most and I love using the lemons from my garden. You will never again buy Limoncello!

Boerewors Stew
มุมมอง 8410 หลายเดือนก่อน
My Mom's recipe for this iconic South African dish made with equal parts Boerewors, potatoes and onions. And well a bit of garlic and salt and pepper. My Mom recently passed away so this is my tribute to her.
Homemade Mayonaise
มุมมอง 48ปีที่แล้ว
I don't know why I haven't been making my own mayonnaise my whole life! It's so easy to do, takes so few ingredients and is, well, a whole lot better that what you will buy in the store. Mayonnaise is basically an egg yolk and oil emulsion. Here I used 3 egg yolks and about 150ml of grape seed oil for every yolk so 450ml in total. (You can really pretty much use any kind of oil.) And the best p...
Creamed Horseradish Sauce
มุมมอง 19ปีที่แล้ว
The king of all condiments for meat. Yum yum yum! I love this stuff and use it on steak, boerewors (South Afric's signature grilled sausage) and even grilled bread. It's a little labour intensive to get it right but make a healthy batch and it will last you weeks in the fridge. Using fresh horseradish root I grate it up and then add vinegar liberally with a bit of salt to turn it into prepared ...
How to fix tough meat in a curry or stew
มุมมอง 27K2 ปีที่แล้ว
Have you ever cooked a meat curry or stew and found the meat to be too tough in the end? Maybe you chose a poorer quality meat or you messed something up during the cook? Well never fear, a fix is near:) While cooking this Durban beef curry, I realized the meat I chose from Costco was less than awesome and my curry turned out tough. So here I show you how you can 'fix it in the mix,' as we say ...
Making Samoosas
มุมมอง 262 ปีที่แล้ว
In this video my wife Anneli shows us how to construct a samoosa. (Or samosa if you're not from South Africa:) You can find the pastry skins at your local Indian or middle eastern store and you can use whatever filling of curry or whatever you want. The glue is just a simple mix of flour and water. So much fun is to be had experimenting with different fillings. Just fry in oil and you're the ta...
Rib Eye Steak And Asparagus
มุมมอง 752 ปีที่แล้ว
Coming from South Africa I'm always trying to find a way to bring the South African taste experience into my cooking. And with this simple recipe for cooking steak I use rib eye steak with salt, pepper and most importantly roasted coriander to flavor my steak. Accompanied with thin asparagus, this is a simple and effective way of making your steak taste South African. Paired with the 'Benoni' w...
Sparky's Red Sauce
มุมมอง 182 ปีที่แล้ว
This is my take on a spicy red sauce like Tabasco, Cholula or Tapatio and is very simple to make using red chilies from either your garden or the dried ones from the store, or some combination of both as I have done here. Using an onion and garlic caramelized thickener, limes, salt and sugar, this is the simplest and most delicious of sauces, ready for your steak, sausages, vegetables or anythi...
Grilled Pork Loin
มุมมอง 482 ปีที่แล้ว
A very simple and impressive recipe for a grilled pork loin that relies heavily on toasted coriander seeds and fresh rosemary to give it a somewhat South African nod. Coriander is the defining flavor of South African meats: it's a key ingredient in Boerewors, our iconic sausage and also our biltong which is our dried meat, like jerky but much better! It doesn't take too long and it's an inexpen...
Jalapeño Pasta
มุมมอง 902 ปีที่แล้ว
This is basically a pesto sauce but with a Mexican twist: Jalapeños, garlic, sour cream and of course, olive oil. It's quite a simple dish to prepare and I bet you've never had anything like it! The inspiration came from chef/owner Toni at his great Italian restaurant called Da Toni's which is in Ensenada, Mexico. This is my take on it and this is an example I bring up when people say Mexican f...
Sag Paneer
มุมมอง 322 ปีที่แล้ว
This iconic Indian dish is one of my favorites. Spinach and cheese curry. Healthy, tasty, good for the planet and the tummy. Enjoyed with naan, parathas, papadums, rice or ahem, Mexican tostadas as I do in this video. You just can't fault this dish that keeps on satisfying.
Sourdough Bread
มุมมอง 8072 ปีที่แล้ว
A foolproof recipe from my friend Simon Jones that needs a starter, flour, water and salt. With minimal effort, a dutch oven or similar pot and an oven you will have the most amazing tasting bread melting in your mouth 24 hours after you started the process.
Indian Mint Sauce
มุมมอง 242 ปีที่แล้ว
This iconic Indian mint sauce or chutney will be familiar to anyone who has ever eaten at an Indian restaurant. Made with fresh mint leaves, fresh cilantro, jalapeños or serrano chilies, yoghurt, salt, sugar and cumin, this dipping sauce is customizable to suit your tastes and accompany your samosas, papadums and literally any other food you can think of including sausages and steaks.
Biltong Chilli Bites
มุมมอง 8K2 ปีที่แล้ว
A classic South African tale. Biltong is like Jerky but better!! Much better. Chili Bites is basically biltong but cut up smaller and with chili added. Spice Mix (for 10kg of meat so divide it up depending on your amount) 180g salt coarse or kosher 60g coriander seeds roasted 20g Fine black pepper 30g brown sugar 45g curry powder, paprika or spice of your choice (Optional) For the marinade: Equ...
Smoked Old Fashioned
มุมมอง 162 ปีที่แล้ว
My take on this classic drink which includes fire lit orange peel and a slice of jalapeño. No sickly sweet maraschino cherries to be found here!!
LIDL cubed Steak is so tough it would scare a Terminator! Painful to even chew it! I don't have any baking soda! Take the beef out and cook it again for 2 hours!??? Bills are up in the UK. GET real! UK 🌹😁😭🎄🦃😁🙄🇬🇧
Sorry no good for uk where electric and gas are very expensive. Give us another idea. 😢
You just saved my pot of beef stew. I used the common beef stew meat sold in my grocery store. I will use this solution. . BUT,I also want to "fix" the stew liquid, not quite how I like it. TY for this "stew saver" for me and others. Bravo !
Great vid! Thanks 🙏🏼 so much. Just a comment on the salt. You need to use non-iodated salt or you're gonna end up with that funny aftertaste in your mouth. (Drooling to try this one out!🤤)
Just use preasure cooker
Rancid meat and dry
Shiny side inwards? I thought it went on the outside
Well depends... shiny side gives the most heat refraction. So in this case I want it warmer inside the foil so shiny side in. But for example sandwiches packed in foil at a picnic - shiny side out so the foil reflects max sun/ambient temp and so sandwiches stay cooler.
I have a friend from Johannesburg and he never wants to tell me his recipe and it’s man good so if you got something to get him, I would appreciate that. Thanks.
Any cool recipes??
Hi mate, can I use the same type of dehydrator for larger pieces of meat?
Ain't nobody got time for that lol
I made these. They were awesome❤
Fantastic!!! Makes me happy to hear:)
Another method you can use pressure cooker.
Exactly! I was going to say that!
You're absolutely right. But I'm not a pressure cooker fan - I don't mind taking time. And pressure cookers are kinda out of fashion these days:)
I loved your video and your cheery vibe ! A year later and glad I just came across this video just in time to SAVE MY BEEF ! haha thank you all the way from UK! Xxx
I love him already. Before we start the recipe, what are we drinking?!
Great vid
Thanx!
Hello. I have a tough beef curry I’m wanting to fix. But I don’t have an oven. Would the slow cooker on high work as a substitute?
Yes that will work. As long as it’s about 300f inside and covered with foil to prevent drying you should be good.
Yes I can confirm this worked. I used the low setting on my slow cooker for about 4 hours. I didn’t check it though and it had lost a lot of moisture but I caught it in time. It was so much more tender. The fork could easily smoosh it. I added the beef back into my massaman curry and it was very enjoyable. Thank you for this video. It helped me fix my disaster meal.
Pro tip- whenever you cook any kind of tough meat don't cook it on high heat initially saute it in oil for 5-10 until you get a nice colour then add your base pure like onions garlics spices (no salt) etc and don't add anything citric for now again "no salt" for now and let it simmer on low heat for the next 20-30mins and then add tomatos if you want then add salt and any stock you'd like or just water then let it cook on the lowest flame for the next 1-2 hours depending on the meat type and trust me by following this procedure you'll get the one of the most tender meat you've ever had the key is not cooking it on high flame not even initially as high heat results in uneven breakdown of the proteins in the flesh hence the rubbery tough and chewy texture also don't add salt until you've saute it properly for 20-30mins with species and base puree bcz salt absorbs the water content available in the meat which also results in tough meat good luck
@@popcorn520 Gr8 tip! Thanx:)
How long was it cooked the first time? I cooked my stew in the crockpot on low for 6 hours and it is tough and chewy. Will cooking it longer using this method work for mine ? I’m ready to throw the whole pot away
Yes it will work! Don’t throw it away. Mine was cooked about 4 hours first time. Sometimes it just ends up tonight.
i just could not digest mutton , after cooking for 30 mins , I taught i have developed intolerance to mutton. Cooking is so time consuming
GORDON RAMSEY 2.0
Ha!! But not the first time:)
What ingredients can I use to make chilli bite
Trying it out right now! Can't wait.
Thanks so much for this easy to follow recipe. My biltong turned out fantastic! I love it. Looking forward to your next videos
Fantastic to hear!!! I'm just making another batch as we speak:)
Awesome!!
Thanx!
300 or 350 C? That doesn't seem like very low heat?!
300f = fahrenheit
we usually add chilli flakes to chilli bites here in south africa as well
Yes!! And that is totally fine. I just prefer the curry powder from Durbs - still got a kick but has a flavor to it. Personal preference:)
Better is an understatement. I need to learn to make my own because I spend an average of $100 / week on Biltong & Snapsticks
Wow that quite an appetite:) You'll never go back once you make your own!!!
Hi, great video. It seems you forgot to post the receip
Actually the ingredients are listed. But the process is just outlined in the video.
Nice
Thanx!
Thanks for the video 👍
You're welcome. Hope it was helpful!
This is so awesome Sparky, and thanks for the mention🙏🌻
Benoni brings out the best! Love this
