*VEGAN RECIPE* Beluga lentil and broccoli curry with pak choy
Scrumptious and wholesome curry with lots of broccoli and beluga lentils, served with quinoa and pak choy. You could also use chickpeas or serve with rice, this recipe is easily adapted to other legumes, grains or even veggies. Just use what you have on hand, nice and easy.
Instructions:
Wash beluga lentils and put on to boil
Wash quinoa and put on to boil
Wash broccoli and chop into small pieces
Dice onion and grate thumb-sized piece of ginger and 3 garlic cloves
Fry onion in olive oil in medium sized pan
After 5 mins, add garlic, ginger and 2 tsp cumin, 1 tsp coriander and 3 tsp curry powder
Fry for a minute, then add broccoli, coconut milk and water to cover
Bring to the boil and simmer for 10 mins
When broccoli is tender, season to taste with soy sauce and lime juice
Mix in cooked beluga lentils
Wash and roughly slice pak choy
In a big pan, heat olive oil and fry pak choy for a few mins until leaves are wilted and stems are tender
Season with soy sauce
Time to serve

Cumin
Coriander
Curry powder
Soy sauce
