Homemade Tortilla Chips
INGREDIENTS
10 corn tortillas
¼ cup olive oil
1 lime
Kosher salt, to taste
Paprika, to taste
Garlic powder, to taste
DIRECTIONS
1. Slice the tortillas into eighths.
2. Evenly space the tortilla slices onto a baking sheet.
3. Using a brush, coat each slice with olive oil.
4. Squeeze the juice of 1 lime onto the tortilla chips.
5. Sprinkle the chips with kosher salt, paprika, and garlic powder.
6. Bake the tortilla chips in the oven at 350 degrees for 10 - 20 minutes or until desired crispiness is achieved.

    WIC is keeping the community sick. The fact that we’re not allowed to purchase organic food tells it all. Soy milk is terrible for health and if state level nutritionist haven’t figured this out by 2024 that’s terrible. The only thing of value is the $ for fresh produce. But I’m not surprised WIC is a government program can’t expect too much

    Where do the nutrients come from for fortification? If they are not naturally present in the food, they must be processed out of something else to be put into the food that is fortified. Do you have any resources to provide more information on the source for the fortification micronutrients?

    I am a conservative by nature. I have known people in the past that scammed anything they could. That gave me a bad outlook on food programs. A communist friend of mine pointed out something that I have to agree 100% with. Lets be clear, I am not against food for people who need it. I am against scammers. OK. There is no program that touches more people than a food program. Field workers, field owners, gathering truckers, ware housemen, truck drivers again, processor workers and again warehousmen, trucks again, on and on until it reaches the end user. No other program helps everybody the way food does. Unfortunately it is used as a political tool most of the time.

You're right, food programs have a far reaching impact- I'm happy to read that you support food programs for people in need. WIC is a bipartisan program that's supported by both Democrats and Republicans. And yes, I agree that often times these programs and others are used as a political talking point by politicians. I wish they would focus less on the politics and more on the science/efficacy/impact that these programs have on the population.

    I Thank you for these videos, like you I found that working at clinics or other locations as a nutritionist were not for me. Working at wic is my goal, I just graduated with my masters in nutrition and am trying to get into wic. Your videos are helping me prepare for interviews and simply get to know the program the best I can. Helping my community especially mothers and children is my passion.     There's an underlying assumption that there will be a "dairy sized hole" so to speak in people's diets if they switch. I question the assumption that dairy is fundamental to the human diet. I don't believe people are under a misapprehension that plant milk is fundamentally the same nutritionally as cow's milk. They have no more right to expect the two products to be the same than they have the right to expect that whole milk has the same nutritional content as skim milk. Arguably it's more misleading to call plant milks plant beverages. What is a plant beverage? It's vague. I've seen several plant based milk producers find creative ways ahead of the curve if regulators do come down on them. Hence, Malk or Not Milk plant based beverages.

    Really appreciate this video! I found your channel because I was seeking more information about the WIC Program. I am completing my MPH and I'm putting together a policy eval memo looking at options to improve pregnancy outcomes in Missouri. To policy advocacy is the perfect blend of research, writing, and promoting action/change. Participation and interest at the local level is key (my opinion at least).       A bipartisan program supported by both Republicans and Democrats, WIC helps to build a healthier generation thus contributing to a stronger nation. I'm not sure where the assumption that women participating in the program made bad decisions but it's incredibly narrow-minded to say the least.

    Assets should be included in determining the poverty level? One could have a low or no income and yet own a mortgage free home and have millions in the bank.

      Thank you for your comment, John! The FPL is determined nationally, not individually, so I don't think it could be feasible to incorporate individual assets into the calculation that the federal government uses. But if you're suggesting that assets be included when determining eligibility for participation in federal programs, based on my experience working for WIC, I don't think that'd be beneficial. For the most part, program participants aren't trying to use benefits they don't need so the likelihood that one would own a home/have millions in the bank and still participate in a federal program for low income families is unlikely. It's not impossible but it is unlikely. Additionally some federal programs have divisions that specifically focus on fraud and how to prevent it. I hope my comment helped but please feel free to comment with additional thoughts/questions!

I recommend contacting your local WIC agency and asking if they're hiring, what positions they're hiring for, etc. and from there, see if you qualify to work for WIC. Qualifications vary depending on position so unfortunately, I can't answer your question directly. Let me know if you need anything else!

    You still didn't answer the question. What is the FPL for North Carolina. At what point does a person qualify for assistance. I am at poverty level and live by Myself with no help from anyone. We have billionaires in this world but the United States is considered the most richest country in the world with the highest poverty level. It goes into politicians and anyone who knows how to work the system when you have 2 people working and still can't afford 2 children. They are 1 paycheck away from being homeless as is so many boomers who are on disability or live alone. I am one paycheck away from being homeless. After I pay my bills I have $2.15 in my checking account and still haven't bought groceries. I do get $13.00 in snaps but you tell me what $13.00 can do in this inflation with food, gas sky rocketing.

Unfortunately, there is no FPL for North Carolina - the way the federal government defines the FPL is that it sets the value based on family size for the 48 contiguous states and has a separate FPL for Alaska and Hawaii. This is incredibly unfortunate as we all know the cost of living varies from state to state. Therefore, having a poverty level/threshold per state would be the ideal in my opinion.       Excellent question! In their 2017 report, NASEM reduces the amount of juice given to participants by half and recommends allowing participants the option to substitute their juice benefit for an extra $3 on the CVB so that they can buy more fruits and vegetables. So the good news is that juice, provided that USDA accepts the recommended changes, will be further reduced in the WIC food package. Now whether or not juice gets completely eliminated from the WIC food package in the future remains to be seen. :-)

      Excellent question! I don't have any recipes/recommendations per se for infants. For the first 6 months, all an infant needs is breastmilk/formula. Complementary foods can be introduced anywhere between 4 to 6 months depending on the infant but generally, foods shouldn't be introduced before 6 months. The American Academy of Pediatrics (AAP) recommends introducing single ingredient foods for a few days to ensure no allergic reactions. With regards to whether or not it's better to make your own baby food, I'd consider it somewhat of a gamble since toxic metals get into fruits & vegetables through the soil so it depends where things are grown as some regions of the country have higher concentrations of toxic metals. But personally, I'd prefer to make my own. I hope this helps!
