Hi, I'm Tyler!
I'm a medical student with a deep interest in nutrition and the microbiome. The microbiome is the population of bacteria and other microbes living in and on our bodies. Evidence (both anecdotal and scientific) has been accumulating over the last few decades that these very close neighbors may hold the key to restoring and maintaining optimal health, and even curing many of the conditions that now cause the majority of suffering and mortality in the developed world.
I became convinced of the importance of the microbiome from books like The Plant Paradox, Eat Dirt, Brain Maker, and Cooked. I highly recommend any of these books to people who are interested in improving their general health, stress, weight, and autoimmune issues.

Things I wish I knew before I started Fermentation
Alas, here are my top fermentation tips to complete beginners fermenting kombucha, lacto fermenting sauerkraut, pickles or fermenting nearly anything. Fermenting every single vegetable is not difficult with good equipment and the best practices. The wild world of fermentation is a concerning place for many, but here's a guide for where to start.

I did not mean to do this this, but I put off taking them out because I was preoccupied (procrastinating). I highly recommend not doing this. To me it tasted more like an omlet, very "eggie" flavour.
My continuous brew kombucha never over sours anymore. I started taking the Scoby out every day and discarding it. It would regrow every day and I just use a fork and take it out. I add more sweet tea as needed . If I add a lot of sweet tea to my continuous brew, I will leave the new growing Scoby for 2 to 3 days before I take it out and discard it. This prevents my kombucha from ever getting too sour .
Excellent review. I am exactly like you, I love watching the whole process. I also like making wine and vinegar as well. I get bummed out when the process is done.
Brewing from a continuous jar is nice. You still have to open to stir, but at least pouring is easy and not as messy. The jar I have, I can screw the top part of the spigot off where scobies form so I have to wash it after each brew. This can cause a slow flow or contaminate your new brew. Mine also has a screen top, so no filter and rubber bands.
I make pancakes with 2 eggs, one banana, coconut flour, blueberries, cocoa powder, rolled oats, desiccated coconut, vanilla and cinnamon. I will now add psyllium husk powder.
Do i need to refrigerate it 😅 after certain level of fermentation??
This idiot didn't read the instruction you were supposed to shake it hard before straining.
Why do you wash your grains?
Especially with tap water which can kill the grains if it has chlorine.
Looks good! Enjoyed your review. If you want to make your life way easier let the salted cabbage sit in a bowl or bucket first to marinate. This saves pounding like a maniac 👍💪
Can we add stevia in the pancake batter?
The only time I run into this is when I add fruit. I now wait for fermented to complete to add it

One thing I learned is that, when those channels lightheartedly mention that "fermented funkiness," they mean it smells funkin terrible. By concentrating juices or broths to ridiculous levels and using them for the brine, I can overpower that funkiness and push it to the background.

You really should be getting your supplies from “The Kombucha Shop” or “Urban Kitchen”. They are higher quality than most other suppliers.

boiling water for 15 minutes will remove all of the chlorine form tap water. Alternatively, leave a jug of water uncovered at room temperature for at least 24 hours and the chlorine will evaporate without boiling.
if there is mold on the top, then is the veggies that are submerged still edible?

If you want all the fat, that's a good way to go. But some are doing PSMF, so it's great to know that egg whites alone make a palatable end product.

My grandmother used an ax handle to bush down the cabbage. It was like a 10 gallon crock.
so when you puut cabage there and weight and cover it you don't have to do anything? just wait around 7 days? because when I saw videos people doing it in jars they poke that cabage every day with a stick to get the gas out
You could add vanilla, salt , cinnamon too and please use the proper spatula and not a rubber utensil to flip pancakes.

I just used my new crock today [a different brand] and used a french rolling pin made from hard maple from Antiques of Tomorrow via Amazon - not a commercial - I've had one before that got nailed in a flood so glad to replace it and it worked like a dream! Great video :)
