Vlogmas 6-9 | Making Bagels from Scratch + Kitchen and Cocktails + Sunday Reset Event + Cooking
Hey Babes!
Welcome back to another vlogmas....we have so much going on.
Atlanta finally has their very own Kitchen + Kocktails location at Perimeter mall. I think I'm unstoppable after I actually made my very own bagels at home, but let me stop summarizing... enjoy the show =).
Here is the RECIPE to the cinnamon raisin bagels:
Making cinnamon raisin bagels from scratch is a fun and rewarding process. Here’s a simple recipe you can follow:
Ingredients:
• 4 cups bread flour (plus extra for dusting)
• 1 tablespoon sugar
• 2 teaspoons salt
• 2 teaspoons ground cinnamon
• 2 teaspoons active dry yeast
• 1 ½ cups warm water (110°F/45°C)
• 1 tablespoon vegetable oil or melted butter (for the dough)
• 1 cup raisins
• 1 tablespoon honey (optional, for boiling)
Instructions:
1. Prepare the Dough:
• In a small bowl, dissolve the sugar and yeast in the warm water. Let it sit for about 5-10 minutes until it becomes frothy.
• In a large mixing bowl, combine the bread flour, salt, and cinnamon.
• Create a well in the center of the dry ingredients and pour in the yeast mixture and oil (or melted butter). Mix until a dough starts to form.
• Knead the dough by hand or with a stand mixer (using a dough hook) for about 8-10 minutes, until the dough is smooth and elastic.
• Add raisins gradually, kneading them into the dough as you go.
2. First Rise:
• Lightly oil a bowl and place the dough inside, covering it with a damp cloth or plastic wrap.
• Allow it to rise in a warm place for about 1 hour or until the dough has doubled in size.
3. Shape the Bagels:
• Preheat your oven to 425°F (220°C).
• Punch down the dough to release air, and then divide it into 8 equal portions.
• Roll each portion into a ball, then poke a hole in the center with your thumb. Gently stretch the dough to form a ring shape. The hole should be fairly large, as it will shrink during the boiling process.
• Place the shaped bagels on a floured or parchment-lined baking sheet and let them rest for 10 minutes.
4. Boil the Bagels:
• Bring a large pot of water to a boil. Add the honey or a tablespoon of sugar to the water if you like a slightly sweeter flavor.
• Reduce the heat to a simmer. Gently place the bagels into the water, a few at a time, and cook for about 1-2 minutes on each side. You’ll notice the bagels puffing up.
• Remove the bagels with a slotted spoon and set them on a wire rack to drain.
5. Bake the Bagels:
• Place the boiled bagels back on the parchment-lined baking sheet. You can sprinkle some additional cinnamon and sugar on top at this stage for extra flavor.
• Bake in the preheated oven for 20-25 minutes, or until golden brown.
6. Cool and Enjoy:
• Let the bagels cool on a wire rack before slicing.
• Serve with cream cheese, butter, or your favorite spread.
These homemade cinnamon raisin bagels will be deliciously soft on the inside with a slightly crispy crust. Enjoy!
