Grumpy’s BBQ Butt Rub Bacon Wrapped Little Smokies
12 cocktail franks
4 slices of bacon, cut in thirds
1 Tbsp yellow mustard
1-2 tsp Grumpy’s Go To Seasoning (approximate-we just sprinkled from the can)
1 Tbsp Grumpy’s BBQ Butt Rub
2 Tbsp brown sugar
Mix the BBQ butter rub and brown sugar in a small bowl. Set aside.
Cut bacon in thirds. Lay each piece flat and spread with a bit of mustard and sprinkle with a bit of Go To Seasoning (use as much or as little as you like of both mustard and seasoning).
Wrap each piece of bacon around one cocktail frank and secure with a toothpick. Gently toss the wrapped franks in the BBQ/Sugar blend until covered.
Place on a sheet pan lined with parchment, foil or silpat. Sprinkle with any remaining BBQ/sugar blend.
Bake at 375 degrees for 30 minutes in the middle of the oven. Move to an upper rack for the last 10 minutes. You want the bacon to render and be crispy. Enjoy the amazing aroma as it cooks and watch as they get eaten up quickly!
You can also do them on a grill over low, indirect flame for about 35-45 minutes. So delicious!
This is a very flexible recipe, use spicy mustard, Dijon mustard, add some Mardi Gras Blend for extra heat. Make it your own. Double or triple as needed. Very easy to make, takes minutes to assemble.
