Our State On A Plate - Burnt Eggplant and Turkish Ezme
Chef Stuart Laws shares his go-to at-home recipe, the hearty and delicious burnt eggplant, Turkish ezme salsa and tahini goat cheese salad.
Serves 4
Ingredients
• 2 large eggplants
• 250g goat’s curd
• 100g tahini
• lemon juice
• 100ml olive oil
• Red capsicum
• Ripe tomato
• 1 tbsp tomato paste
• Shallot
• 1 small knob ginger, grated
• 2 clove garlic, grated
• ¼ bunch coriander
• 100ml sherry vinegar
• 100ml olive oil
• 1tsp sumac
• 1tsp aleppo pepper or any mild chilli flakes no seeds
Method
For the goat’s curd
1. Whisk together the tahini, goat’s curd, lemon juice and olive oil, and season to taste
2. Spread on the base of the service plate
For the eggplant
1. Turn on the gas stove, pierce the eggplants with a skewer and place over the naked flame
2. Cook until fully collapsed and skin is burnt
3. Remove and gently place in a bowl and cover with glad wrap to steam
4. Peel the eggplant making sure the flesh comes off the skin
5. When clean, slice and place on top of the goats curd
For the ezme
1. Finely dice the tomato capsicum and shallot
2. Add the grated garlic and ginger and finely chop the coriander (leaf and stem)
3. Mix with remaining ingredients and spread on top of the eggplant
4. Serve

It's a good environment for fish to grow but we have no sea exept for past Broome, the continental shelf is very close to the rest of WA meaning there isn't very much fishing ground along side that we also have very flat land and that translates to the water meaning we have limited fish holding structure in comparison to over East or many other countries.

It's lovely food and no meat. It's nice to see people with little means being able to eat here because others pay a little more and because of the wonderful volunteers.

This is one of my favourite restaurants in Perth/Freo and I go at least once a month. I'd go more if I lived closer! I also buy regularly buy stuff from the store. Highly recommended. :)
I used to volunteer for work experience when I was still in high school I couldn’t recommend it enough out of all the places I volunteered at this one is my favourite I miss volunteering here if I still lived in Perth I’d definitely come back

Not sure how these meat alternatives can be said to be healthy when they usually contain high levels of gluten- which gives the 'meaty' texture. Dr Shy any hints on the types of 'binding 'agents used in some of these products - that point to a more digestible food source ? like agar agar or carrageenan. Is there a guide to a "healthy list of ingredients" and "not healthy list"?

DR Shy totally agree. Pre biotics in the gut are from the foods we eat, your thoughts on this effect from different forms of cooking - steaming, boiling , sautee and frying.? enhanced or diminished? Probiotics in the form of yoghurt and yoghurt side dishes like Indian Raita and fruit/yoghurt dessert, diluted youghurt drinks like "Mooru" , cheese in all forms, are an easy way to make sure you have a daily dose of probiotics. Fertilising the garden to use your analogy. Your thoughts.? What happens to the probiotic value of yoghurt and cheese varieties when cooked into a dish? Is it enhanced or diminished?
