Butterflied Baked Jerk Chicken Legs
Ingredients
For the Chicken:
12 organic drumsticks
For Cleaning the Chicken:
Water
1 lemon
1/2 cup vinegar
Spices:
1 tsp cayenne pepper
1 tsp paprika
1 tsp smoked paprika
1 tsp black pepper
1 tsp ground allspice
1/2 tsp whole allspice (pimento peppers)
1 tbsp garlic powder
1 tbsp onion powder
1 tsp salt
2 tbsp Jamaican jerk joy (@floraandmana)
1/2 tsp liquid smoke
1 tsp corn starch
1 tsp baking powder for dusting
Wet Seasoning:
4 green onions
1/2 bunch cilantro
1 bunch fresh thyme
1/2 tsp salt
1 green bell pepper
1 red bell pepper
1 lemon
2 limes
8 cloves garlic
1 white onion
2 inches ginger
1 Scotch bonnet pepper
1 tbsp brown sugar
For Dusting on Chicken:
1 tsp corn starch
1 tsp baking powder
For the Sauce:
1/2 of the reserved green seasoning
1/4 cup honey
2 tbsp butter
Instructions
Butterfly the Chicken:
Butterfly cut the chicken legs.
Clean the Chicken:
Marinate the chicken in a mixture of water, lemon, and vinegar for 15 minutes. Drain the water out.
Add Spices:
Add the spices to the chicken and let it sit for 20-30 minutes.
Prepare Wet Seasoning:
Blend together the green onions, cilantro, salt, green bell pepper, red bell pepper, lemon, limes, garlic, onion, ginger, Scotch bonnet pepper, and brown sugar in a blender.
Reserve half of the wet seasoning for the sauce.
Add the remaining wet seasoning to the marinated chicken and mix well.
Marinate:
Marinate the chicken in the spice and wet seasoning mixture for at least 4 hours, preferably overnight.
Prepare for Baking:
Preheat the oven to 350°F.
Lay the marinated chicken on a baking pan.
Dust the chicken with corn starch and baking powder.
Bake the Chicken:
Cook the chicken for about 35 minutes, checking the internal temperature to ensure it's fully cooked.
In the last 2 minutes, switch the oven to broil to achieve a crispy texture. Keep a close eye on the chicken to prevent burning.
When flipping the chicken, brush more marinade on top.
Make the Sauce:
In a pan, melt 2 tbsp of butter and add the reserved wet seasoning.
Cook down until the water evaporates, then add honey and remove from heat.
Combine and Serve:
Once the chicken is cooked, transfer it to a bowl and toss with the prepared sauce.
Garnish with additional cilantro on top.
