Bake off OPERA CAKE Recipe - RELAX
Welcome to WEEK 9 Great British Bake Off - Opera Cake
Join me this week to recreate the Week 9 TECHNICAL BAKE CHALLENGE 🥖

Equipment
- DJI Osmo amzn.to/3ZLuhbk
- Suction Phone Mount amzn.to/47Q35dt
Your Opera Cake should have 8 layers of joconde sponge, coffee, crème aux beurre and a dark chocolate ganache. Singing is optional. You have 2 hours and 45 minutes to compete this challenge.

Ingredients
For the chocolate ganache
300ml double cream
250g dark chocolate, 54%
25g unsalted butter, at room temperature, cubed
For the joconde
225g ground almonds
225g caster sugar
5 large eggs
5 large egg whites
50g plain flour, sifted
35g unsalted butter, melted
For the French buttercream
5 large egg yolks
160g caster sugar
50ml water
250g unsalted butter, softened
XX tsp coffee extract
For the syrup
75ml water
75g caster sugar
XX tsp coffee essence
To assemble
70g dark chocolate, 54%
For the chocolate decorations
180g dark chocolate, 54%
5 x cocoa butter transfer strips 6cm x 20cm (Optional)
For the chocolate glaze
130ml double cream
25g caster sugar
20g liquid glucose
125g dark chocolate, 54%
Method
Make the chocolate ganache set aside to thicken
Make the joconde batter
Spread two thirds of the batter onto a lined baking sheet. You will need to cut two sponges to fit the frame once baked.
Pour the remaining sponge batter over one half of the second lined baking sheet. You will need to cut one sponge to fit the frame once baked.
Bake
Make the coffee syrup
Make the French buttercream
To assemble, lightly grease and line a baking sheet with an acetate sheet and line the tin with acetate
Spread a layer of chocolate onto the base of one sponge and then place chocolate side down into the lined tin and brush with coffee syrup.
Add half the chocolate ganache to form a layer and freeze.
Spread half the buttercream over the ganache then top with a second sponge and brush with coffee syrup.
Repeat the process with the ganache, buttercream and final sponge. Chill.
Make the chocolate glaze.
Remove the opera cake from the fridge and pour over the chocolate glaze and spread evenly before returning to chill so it can set.
Demould the cake and use the hot knife method to trim the edges.

Recipe (I Doubled My Recipe) - 2 cups all-purpose flour - 1/2 cup sugar - 1/4 cup packed light brown sugar - 1 teaspoon baking soda - 1/2 teaspoon salt - 3 very ripe, darkly specked bananas, mashed well (about 1 ½ cups) - 1/4 cup plain Greek yogurt (nonfat or regular) - 2 large eggs - 1/4 cup vegetable oil - 2 1/2 teaspoons vanilla extract - 1 cup chia seeds and sunflower seeds

So glad I stumbled across this, I’ve been thinking about studying physiotherapy/ becoming a physiotherapist but felt unsure about it as I know nothinggg about the field or how to become one but hearing more about it is making me feel like it could still be right for me.
Btw as a vegan I think the stem cell meat is for those vegans who still want to eat something meat like but don’t want an animal to die, or to contribute to climate problems by eating beef which is the leading cause of deforestation in tropical rainforests
