    Thank you for this. People do not believe me at all, and I've had a lot of people try to get me to eat food made in a kitchen where glutenous flour is in the air, settling on everything else. You can easily overtime get more than enough gluten in your system through breathing flour in, getting it into your mouth when you speak, breathe, yawn, open your mouth, it'll get on you and your clothes. If gluten is a problem due to celiac, and you do not wear protective garments, it'll get on your clothing, hair, skin, etc. According to the European studies, your immune system begins attacking your internal organs at 15ppm. That's less than the USA 20ppm. That's an insanely small amount, and many patients do not get symptomatic at that level, even though the harm is already being done. So even if you do not think you're impacted, you are. It's also important to note, there absolutely are people who have messed up their stomachs so badly, they have permanent struggles with their food and nutrient absorption due to celiacs being ignored for too long. Short term exposure isn't a big deal, but it takes roughly 6 months to heal from an exposure even if you're symptoms go away much faster than that. It's also good to note that nutrient absorption problems don't just impact people physically, but can cause severe mental and emotional ramifications to patients as well. I won't, if I have kids, allow my young children to eat gluten inside the home or in any situation where it will get on them, and therefore on me, because I also have mcas, ADHD, eds, pots/generalized dysautonomia, and more, so if I have a celiacs flair it's not just nutrients, it's also all my other conditions worsening also and can make my ability to function nonexistent. And again, even if you don't feel it, 15ppm begins to damage your internal organs, so for me it's just not worth the risk, especially having known people who now require feeding tubes, have hernias that don't go away, and more issues to boot. I've had so many people call me over-exaggerating, dramatic, a liar, and more bad things because of my viewpoints. So I appreciate this video sharing how incredibly bad this can be for celiac patients.

Aside from that, maybe the myth didn't start off being about celiac but the countless people who *TELL* me I can eat the wheat flour in Europe when they find out I have celiac definitely makes it relevant.

      Maybe I should have added in my opinion and UK doctors as I’m from the UK. Two weeks to get an appointment and if you are lucky enough to get one they don’t listen and only have two minutes to listen to you. It’s is what ever medicine is paying them the most kick backs. Take this and on your way. Charlatans the lot of them.

    I am a fairly new celiac as well as my two kids and figuring out how to handle if there is going to be dinner rolls at the thanksgiving meal and then people are eating their rolls and then grabbing and passing the thanksgiving dishes around the table. Is cross contact possible with this? Would you recommend having separate dishes for the celiac people to dish up from? Or is this risk very low.

      That's such a good question! If it's possible, I would have separate dishes for the celiac people! This reduces a lot of risk for them.

    2 of my kids were just recently diagnosed. With the holidays being so close, do you recommend clients bring their own food for the first year?

      The holidays require you to use nearly every celiac-safety skill so if you're still working on feeling confident in using them, or if you don't think it's worth the stress, I think it's a valid option!

    I don’t know if I have celiac but I’m dairy and gluten intolerant plus I can’t go near corn / maize. Corn is listed as gluten free so was wondering if anyone struggle’s with corn?

      When I was first diagnosed with celiac I couldn't tolerate corn, luckily as I healed my small intestine I was able to reintroduce it back. I've had a few clients who experienced this too. But some have had to permanently keep it out or had an actually food allergy to it.

      Thank you so much for the reply and the great advice. I’d never thought about giving my time self time to heal as it was only a week ago I had a bad flair up due to drinking red wine that had milk in it. Milk in wine who would think they (some wines) put that in it. This is all very new and strange for me to get used to as it only started this year. I’m 35 and never before had any problems with anything. It will be interesting to see if I can tolerate corn but will probably give myself a month to heal from my last attack.

    I’ve met a lot of abnormally vindictive people. To the point if their partner glanced at a stranger or maybe they misinterpreted something someone said, they could actually be so set off they would act and do strange things. I don’t even think I can say it’s just me at this point. I’ve also worked at a pizza place and I remember having gluten free pizza. I think there was a lack of understanding because often the same cutting board or knife would be used with gluten free pizza and regular pizza. Just those two things together, you have to realize how much trust you’re putting in people.

The worst is when I’m reading over the label and everything is looking good…and then I spot the dreaded natural flavors 💀 Then I have to determine if I want to call/start googling or just put the product back on the shelf 😅 I hope one day our food labeling laws can be updated to better accommodate people with celiac and others with gluten issues! Also, I took your free label reading class a while ago when I was first diagnosed and it was truly a lifesaver for me.     I always steer clear of anything that isn't marked gluten free from Hershey because there is a reason they aren't willing to put that gluten free bar on it. For our child we can't risk any cross contamination even with good cleaning practices and since Hersheys statement said that they don't put the gluten free mark where cross-contamination is possible. When she is older she can make choices that she is comfortable with but we don't want to risk making her sick. Thankfully we have found a bunch of great other options she is happy with. We are lucky that all our kids are veggie addicts so it makes life alot easier to manage and we make alot from scratch. Now if we can figure out how to get her to Italy and in a culinary school she would be one happy little girl.😊

    i usually steer clear of any holiday candies, because most companies expand to use additional facilities to ramp up production for holiday candies. this means they're not necessarily in the same gluten-free factories as usual. several of the companies advise of this. the hershey company prints "gluten free" on the candy they have tried to make sure aren't cross contaminated, and holiday candy rarely has it

      I respect everyone's own individual choices and I also share the research behind the risks of gluten-free vs not facilities AND cross-contact in processing in my TOTALLY FREE label-reading class for people who haven't seen it to help them make their own informed decisions. It is true, Hershey does not often have gluten-free claims on their holiday candies and this is where I refer people back to the conversation I had with them where they stated (slightly paraphrased here but you can see the full statement in the video): they don't always have a gluten-free claim on products that qualify for it.

    Great info, thanks for this. I figured that the holiday ones weren't safe but ill give them a try. As someone with celiac that was diagnosed 4 years ago in my 30s, I didn't know about the possible lactose issues and that correlation. Also have you found any safe candy corn/pumpkins candies?

      occasionally i'll find some random brand i've never heard of that say GF on them, but brach's is "no purposeful gluten, but no cross-contamination precautions taken" and i don't eat it. it's a shame, i love candy corn

    Appreciate you, Tayler! So true. Soon after diagnosis, I went through a bad period of burn out. Doing much better now, but I’ve learned to plan restaurant experiences only as I feel up to it. And luckily my friends let me choose where I feel comfortable eating.

    I was diagnosed by a Gastroenterologist 5 years ago. I have had 2 PCPs that were really helpful and supportive, and were happy how the diagnose helped me. I got a new PCP and when speaking about a complete different issue and how the Celiac effects it, he blurts out "You don't have Celiac Disease". I said it is listed in my record, and he said no, it was not. I said I had printed out the record, and saw the diagnosis there, and he said "Yes, it's there, but the other Doctor was wrong, you don't have Celiac Disease". I was so shocked and don't know what to do. I was soooo sick, and really don't want to go back to that, but I also don't want to be called a fraud. It's so disheartening. And yes, it does make you feel burned out.

      @@celiacnutrition Yes I did. He said because my follow up blood test 4 years after the diagnosis was normal. He said it was impossible not get some gluten, so your check up tests will never be normal. I just made an appointment with the Gastro who diagnosed me, so we will see what she says. Since I had one experience where I bought beans online, and they said Certified Gluten free, and then I got sick over a couple of months, so I checked the actual bag, and it not only did not say certified, it said "Processed on equipment that also processes wheat". I got better again after not eating them.I became VERY cautious and strict after that. I have not been sick since, and I never eat out. He said if I started eating gluten again, and got sick, he would not give me any medication for the symptoms.

      @@shakeyj4523 I have been diagnosed for a little over a year, and my blood work numbers went from 250+ to 1.6. The lab notated on my latest report “no indication of celiac disease“, but I was diagnosed with an endoscopy and biopsy last year, so I know I had and still have celiac disease. The low number is just an indication that I am being vigilant with my GF diet. Maybe your numbers were very low, too, and the new PCP is not that familiar?

    I am 89. Found out I am Celiac 2 yrs ago. No specialist here. Ins does not pay for tests or care. Family does not acknowledge possibly they are also Celiac. I am on Medicare and partial Medicaid. I get where eating is just a chore. Food is bland as l am also sensitive to salicylates. Tonight I just don't feel like eating at all.

      I don't know if it will help, but you can deduct the costs of Celiac Disease on Taxes. The food is expensive and so are any supplements you may have been told to take. Since supplements are considered basically food, you can deduct them. The downside is that you have to itemize, which means you have to keep track of what you eat that is specifically gluten free. Check with your senior center too. Some have meal plans that also can help. Some Senior Centers have people who can give tax advice too. You might be able to add the food to the medical deduction.       Weight loss or weight gain before or after going gluten-free for a celiac diagnosis is common. Everyone's body responds differently.

    When I get gluten I have the following which I don't see listed : I will feel like I have diarreah and will feel like if I don't go to the toilet I will soil myself. Once on the toilet, I have to do tremendous amounts of pushing during a very long period (hours some times) for something to come out, and almost always what comes out (even though it feels like I pushed an elephant from my butt) is just a slimy bubbly thingy that sort of floats in the water, and never anything solid, nor liquid for that matter, it's just this squirt of weird thingy, do you know what that is? Is that what lies inside my intestines? Also I have massive bloated stomach that becomes super hard. What helps me the most, though I guess you can't suggest it, is smoking Marihuana.

    Even approaching staff about GF these days is a dangerous endeavour. I get eye rolled, told nothing is GF without any discussion and get incredibly snarky responses. I am 5 years GF and it does not get easier. If anything, post Covid, businesses are less concerned about being inclusive of allergies etc than ever.

    Okay, I have a rather disturbing call that I had placed to McCormick's about 2 years ago that they never changed either the formula or the packaging of a business they acquired, "Garden Gourmet" from Australia. Why this matters: McCormick was adding in WHEY to their Garden Gourmet fresh herb tubes without listing it, and also did not include on the tube any allergy warnings. Why this matters: the supervisor of their production "plant" for lack of a better term, did not feel that it was "their job to inform the public of possible allergens in their product, after all how is whey an allergen anyway?" The packaging on these tubes is CLEAR, the ingredient listing is labeled in WHITE, and if they failed to put in Whey, why should this matter? We should have sued them. I am just saying, be careful with McCormick's as general rule if you can. I am lucky that we found out that there was whey in their product, which for me has lead to blood transfusions. And yes, I have Celiac's as well. Just know that the company isn't doing "all they can" to keep us safe.

      Wow, that sounds like quite a phone call with some pretty serious accusations. It is not FDA compliant to not list all ingredients used in USA products, and certainly not compliant to not disclose top allergens.It's unclear if this happened in the USA or not, but anytime you think a food is mislabeled in the USA, you should always report it to the FDA! That said, I've never had any issues with McCormick spices that didn't contain gluten in the ingredients as a symptomatic celiac of 10+ years.

      gluten sensitivity is different from celiac, it's hard for me to speculate but if you're worried, I'd definitely bring it up with your healthcare team

      If you haven't gotten the blood test for celiacs then get it, if it's positive your doctors will go from there. If you have celiac you absolutely cannot have gluten so you'll have to find gluten free beer. If it's just an intolerance then talk to the doctor about it.

    I was a baker for about 5 years at a cafe that also baked gluten-free baked goods. I was not a trained baker, just had baked all my life. When i was hired they told me nothing about the gluten-free aspect of it, just handed me the recipes and off I went. Over the years I took it upon my own to learn about cross contact and made adjustments. I retired this April and started having headaches, chest discomfort and Gi issues that i never had before. Lo and behold, endoscopy and blood work confirmed celiac disease! I have a newfound appreciation for the whole gluten-free diet and what cross contact can mean to those with celiac disease. Been gluten-free since about June and am feeling so much better.

    I was hospitalized for what was a suspected stroke. I spent 4 days in the ICU this past January 2024. The reason for the stroke symptoms was dangerously low levels of vitamins and minerals, the main one being B1(thiamine) and I always fluctuated between weighing 168-176 and when hospitalized my weight was 143 and I’m 5’11”. When my endoscopy results came back my damage caused was bad. The doctors estimate a year or more before I’m healed. I honestly thought I was going to die as I didn’t know what was happening while in hospital. No one really understands why I never go to restaurants anymore and rarely go to weddings or celebrations where food is served as I am so scared to go through that again. I have been feeling so isolated since. I’m writing this to say, THANK YOU for this video ❤. Your video is one of the best I’ve found and now subscribed to your channel. You are so educational and appreciate it so much ❤.
