Thanks for the comment, @michaljakistam136 - That's one of the reasons I am so fascinated by accents. I've noticed that in both the Irish and Fargo accents, vowels can be more rounded or open, creating a certain melodic quality. And b/c we're a country of immigrants there are always a mish-mash of influences in any accent.

Great point! And so true. Specifically, that "r" drop. New Yorkers initially took that on b/c of their desire to emulate British prestige. It has taken on a unique life of its own that is distinctly NEW YORK.

Yes. You sure can. However, with pasteurized milk, you'll be losing some of the beneficial properties and it might impact the health and longevity of the kefir grains in the long term. If you go with pasteurized milk, I'd suggest organic, low-heat pasteurized (or non-homogenized) milk. All the best:) Let me know how it goes.

@@jeffvirkus thank you for your response. Ice also heard if you mix kefir with milk, it produces more kefir? I've tried it before and yes, the milk turns into a yogurt consistency over the next few days. Can I just do this process instead of using fresh kefir grains?

Great question, Ruth. Good ear. Both Chicago and Boston have large Irish-American populations, and the Irish accent has had a significant influence on the regional dialects. (Ex: Dropping the "R" & vowel elongation can make "cat" sound more like "cay-ut")
