Ingredients:
Toor dal (split pigeon peas) - 1 cup
Drumstick (mulakkada) - 2-3, cut into 2-inch pieces
Onion - 1, chopped
Tomato - 1, chopped
Green chilies - 2, slit lengthwise
Turmeric powder - 1/4 teaspoon
Red chili powder - 1/2 teaspoon (adjust to taste)
Garlic - 3-4 cloves, crushed
Tamarind - small lemon-sized ball (soaked in warm water and juice extracted) or 1 tsp tamarind paste
Salt - to taste
Water - as required
For Tempering (Tadka):
Oil or ghee - 1-2 tablespoons
Mustard seeds - 1/2 teaspoon
Cumin seeds - 1/2 teaspoon
Dried red chilies - 1-2
Curry leaves - a few
Asafoetida (hing) - a pinch
Instructions:
Rinse and Pressure Cook Dal:
Rinse the toor dal thoroughly under running water.
Add the dal to a pressure cooker along with the chopped drumstick pieces, turmeric powder, and enough water (about 2 cups).
Pressure cook for 3-4 whistles or until the dal is soft and cooked. Let the pressure release naturally.
Cook with Other Ingredients:
Open the pressure cooker and lightly mash the dal if desired.
Add chopped onions, tomatoes, green chilies, crushed garlic, and salt to the cooked dal.
Add more water if needed to get a medium consistency.
Cook on medium heat for 10-12 minutes or until the drumstick and other vegetables are well cooked and the flavors blend. Add the tamarind juice and cook for another 5 minutes.
Prepare the Tempering (Tadka):
In a small pan, heat oil or ghee over medium heat.
Add mustard seeds, and once they start spluttering, add cumin seeds, dried red chilies, curry leaves, and a pinch of asafoetida.
Stir well for a few seconds until the spices release their aroma, then remove from heat.
Combine and Serve:
Pour the tempering over the dal and mix well.
Garnish with fresh coriander leaves if desired.
Serve:
Serve Mulakkada Pappu hot with steamed rice, roti, or any Indian bread.
