Yes, just slightly to allow for sufficient oxygen to get in 😊
They sell fire retardant mats to put under the grill on the deck. I like your grill.

Thanks @keirallze! I did indeed, I find the scales get everywhere in the Weber well smoking the frames. 😊
You can find them at most hardware stores or at a Weber store. They brilliant! Or have a look online for a Weber rotisserie and you could get it from Amazon etc. hope this helps.

I used mine for 3 years, downside to this grill is it won’t get hot enough, and once it’s hot and you open it up, you lose all heat and it takes a long time to reach higher temperatures.
I can totally get your frustration with losing your heat during a cook. Could you perhaps turn the heat up higher to try get up to temp quicker? Might help 😊

Hi @petermoore6251 the off set smoker is one we got from Bunnings about 3yrs ago and it was one of their "house brands" - a no name offset smoker. It was a good deal at the time so I bought it :)

You do not want foil in there… bad move.. it’s going to cause a fire… this is not a good review at all… 👎🏻
Thank for your comment. We have however had our Baby Q for 2 years now and have never had a problem with the foil. We puncture holes in the centre of the foil for the oil to still drip down into the drip tray (less fat sitting on the foil). And this foil gets taken out after each use. Plus, we don’t use the foil for every single use. It’s very intermittent 😊

Thanks guys! We smoked this at a low tempt of around 130c - 150c. Hope this helps :)

So that would be a fish called a Kahawai (New Zealand) or Australian Salmon. 😊 Great fish for smoking.

and do u brine it in water and stuff or do u just rub it on
To be honest, never done the whole brine process. Be keen to try it. I just rub it on and let it sit over night 😊 Some folks do brine, others just rub and some do both. Personal preference I guess. 😃
do u scale the fish
So at first I never did scale the fish, but found it to be too messy with scales getting stuck inside the bbq, on the meat etc - which became a nightmare to deal with. Now I scale all fish before going inside the bbq. Much easier, for me personally.

The baby q is the 1000 model, you are showing a 2000. The 2200 is better with a higher lid, temp gauge and electronic ignition. You should never line your Q with foil it leads to fat fires.
I do see a hole poked into the foil but it's a bbq (meant to be fatty).
