this is not how you make oyster stew. not only does it need a roux, but you should absolutely be cooking the oysters as the final step, rather than cooking them first and letting them continue to cook while you slowly bring the milk/creme up to temperature.

I asked if this stew should have roux, more vegetables, or more substance! I said this "stew" was boiled oysters in butter with warm milk and the fewest spices possible. Lol. Maybe I am missing the point and ignorant of endemic local traditions.

I'm not critiquing this recipe or any other one for oyster stew I've watched, but darn! I'd be upset if I only got 4 or 5 oysters in my Christmas soup! 😆! My one sister only wants the broth, the other wants just the oysters...... so I try to get mine before them or my brothers (who pig out) or it either all broth or gone! I Love this recipe! Same as I make it!

sometimes not, sometimes on the back of the bottle in tiny characters, we're more aware of the region, the climate, less on the variety.
Likely depends on which bottle it is. Some regions indicate the grape varieties, others don't. It's pretty rare in burgundy as they consider everyone knows already what they're drinking haha
