Bacon from a box of bacon ends and pieces that I canned a year and a half ago, I had stripped all the fat from it, rendered all the fat for bacon grease that i use to season with while cooking or baking biscuits and cornbread...it was an experiment to see if we would like it, so I opened it today and fried it up, Jim loves it, he had some piled on top of a baked potato, My sister's husband thinks Jim wont eat this that I canned because Jim is a picky eater, however he loved this, I bought a new box of bacon ends, it is loaded with beautiful full strips of bacon, I am going to can it as well, now that I know we like it...How to Can : Roll out a cut a large piece of parchment paper, evenly lay out your bacon real close together, fold the parchment paper up half way over the bacon then roll it tightly, fit into quart jar, wipe rim, place prepared lid on jar, can in pressure cooker for 90 minutes at 10 lbs pressure for our area.
