    You made great bread. However, this is an ordinary bread. As a baker, turkish baker makes bread different method. We put in left over dough at least %20 the day before in the formula like a biga. We use very cold water even crashed ice. A long fermatation makes it delicious. The Water quantity should be around %70 that makes dough sticky.
