Mine floated only for second and then sank, what does it mean?
Hi! It means that your sourdough has been fed either too long ago or it was fed but did not have enough time to consume fed flour. If you fed it let's say yesterday, give some flour and water. And if it was fed few hours ago, let it sit for a bit longer. Basically, it sank because sourdough starter was too weak. Hope that helps x

Hi! I’ve read that you shouldn’t use metal spoons. My sourdough starter is still going strong. Sometimes when you’re busy and need things to just get it done, I just grab a clean spoon or whatever is available. By now, I’ve broken every rule there is with my sourdough starter. I just keep going and making delicious sourdough bread. Hope that helps! X

Hi, maybe because of the camera angle, it looked like it sank. But I can assure you, the bread would not have come out how it did if my sourdough starter would have not passed the float test. Hope that helps!

Hello, thank you for your comment. Sorry for late reply. I bake my sourdough bread for 50 minutes, at 210C Fan in my oven. And that would make 450F oven temperature. Hope that helps!

I don't know how you got bubbles on third day. I only found it gets going on day 10 well enough.
Hi Meisie, hope you're well. The secret is to keep your sourdough starter really warm: for example, everytime I would boil a kettle, I would either keep the sourdough jar on the top of the kettle or close by. Sourdough loves food but even more warm temperature! xxx

I taught "Simple Sourdough" at a local university. The class got a Tbsp of an actual San Francisco sourdough start from Boudin Bakery in their jars and these instructions. Take it home. Add 1 cup of water. Stir and add 1 cup of flour. Stir, rest at room temp for 6-8 hours. Put it in the fridge and use it to make bread, muffins, pizza, crackers, etc. It is all starter, there is never any "discard". Refresh it with the same process, when it gets low in the jar. The yeast makes CO2 gas and alcohol (hootch) The gas makes the bread rise. The alcohol feeds the bacteria that gives sourdough bread the flavor. If never stirred the alcohol comes to the top of the start. Just stir it again to feed the bacteria. That is the same simple process that has been used for thousands of years. It doesn't need to be complicated. The bread recipe is as simple. 2 cups of warm water, 1/2 cup start, 4 cups bread flour. Mix, 2 turn and folds. Add 1 Tbsp water, 1 tsp salt. 3 more turn and folds, 20 minute rests between t,f. (2 hour class) Divide into 2 loaves. Shape loaves. Put into a Dollar Tree stainless steel dog water bowl ($1.25, simple, cheap) that is lightly oiled and floured, cover with plastic bag. Rest at room temp until doubled. Rest 12-24 hours in fridge. (Longer fridge rest lets acid develop flavor, more acid, more flavor) score, cover with dog bowl 2, bake in 475 F oven for 20 minutes, uncover, bake 12 minutes uncovered. Cool on a rack for 1 hour. Enjoy. This is simple, no scale just a measuring cup, measuring spoons, a large mixing bowl and a table knife to mix the dough (easy to clean) The weight of flour may change a little from cup to cup. Still will be about 80% hydration. After the start is working, there is no further discard. To address it as discard is superfluous and confusing. It is now start and used for making bread, biscuits, pizza, etc. It is not discard nor discarded. It is a start. It is a yeast/bacteria colony, a tool for baking. More infomation that is almost accurate. Make it simple. Put equal amounts of water and flour in your start jar. Stir it and leave it at room temp for 6-8 hours. Store it in the fridge. That's it.
Hi Charles! It took me a long time to get my head around on how to get sourdough starter right. I certainly failed many times to keep it alive ha ha. The pressure of measuring and getting it right felt too overwhelming. But yes, I agree, keep it simple is the right way to approach sourdough for beginners. That's why I don't rely on measurements. I taught beginning sourdough bread bakers. The process had to be simple and effective. The premodern bread baker would just cut a chunk of raw dough off their bread dough before it was baked. The lump of dough was stored in the flour bin until the next day bread baking. Then it was added to the water for the next day's bread.

Nice sourdough, but you shouldn't lockdown the jar, or it could explode; put a piece of cloth over it with an elastic band because it needs oxygen to breathe. Also, use a wooden spoon so the starter doesn't react with the metal.
