Red tortoise Mantou / Wu Gui Bao / 乌龟包 / Easiest recipe ever
Red Tortoise Mantou / Wu Gui Bao (makes 6 mantou)
This recipe needs one proofing only.
♡mantou dough♡
250g plain flour
70g castor sugar
4g / 1 tsp yeast
3g / 1/2 tsp baking powder
135g cold water
♡colouring♡
1 tsp water
1/2 tsp rose pink colour paste
Important notes:-
1. Place mantou into the bamboo steamer to steam when water is cold. Steam for 15mins on high fire from the start.
(You may use an electrical steamer with vent to steam for 18mins too. If you are using a metal steamer with no vent to release steam, you may wrap the lid with a kitchen towel to ensure no condensation water drips onto the mantou.)
2. Leave the mantou inside the steamer for 5mins before opening the lid to prevent mantou from shrinking when it suddenly change in temperature.
3. Mantou will also shrink if you have over-proofed them.
4. You may have over-proofed your mantou if they do not spring back when being pressed.
5. Your room temperature may interfere the proofing process. Colder environment needs longer proofing time. Warmer environment needs shorter proofing time. Hence, observe the size of it and try an error.
6. Singapore is relatively warm throughout the year. Hence, I am using cold water to slow down the fermentation progress from the start of kneading to buy more time in decorating and painting the tortoise later on.

    if it's common to have to knead the dough for 35 total minutes, I will likely restrict myself to no-knead bread recipes.

    Don't worry if you can't pass the windowpane test, I've never been able to but I still try to get it as non-sticky as possible, and the results are always delicious.

    third way was let dough rest not? l;et it rest in fridge so ur dough will be less sticky if u make pizza with this sticky dough it will be best pizza u ever eated trust me

    Adding in butter if the recipe does not require it would just change/ruin whatever it is you're planning to make, hence the first method is definitely wrong on most circumstances Edit: turns out your second method also adds butter, another mistake

    I finally found out why kneading is so necessary as it makes the protein fibers stronger! Few people explain this. Knowing how important this is makes ALL THE DIFFERENCE in the world! Sing a higher protein flour makes a huge difference also that’s why I use King Arthur Bread flour it has at least 12.7% protein!

    Just to clarify as I didn’t see you weigh the wet ingredients, we’re you going by grams or millilitres? They aren’t the same in weight as one is a weight measurement and the other is by volume.

    Thank you so much for this. I made milk bread buns today and the flavor and fluffy texture were great. Only problem was the outside wasn't smooth and shiny. I made the mistake of adding more flour to end the stickiness. The dough wouldn't get any smoother after I did it 😩

    Ok, so I'm supposed to let it sit for 10min THEN knead some more BEFORE letting it rise for baking. Phew. Everything keeps saying it's only 10min tops to knead right before baking. Even with a Hand Mixture, I never get the consistency needed! NOTHING I found stated using Butter to lessen stickiness either. I literally felt like giving up till I saw this. I hate wasting ingredients. I KNEAD more patience! Lol

    Thanks a ton for this video. I was having a tough time with my bread dough. I watched and re-watched this video and finally tried making my whole wheat flour dough with these methods. My dough turned out to be just right. I was smiling so hard seeing my dough come together. Thanks again. Made buns with the dough and it was super soft.

    ok so here's the thing my dough is way too wet and way too sticky after i put the butter in and REFUSED to be shaped into somewhat decent ball shape even after i knead it for like 30 minutes that I just had to put ij more flour... 😭😭

      I can't get a round, dense ball. It's got fissures, not connected, etc. I did something wrong. MY first attempt at a friends recipe, fail. The dough didn't rise or get soft. It did not have the consistancy it was supposed to. I don't know IF I'll ever do this again.

      @@KindCountsDeb3773 I think the main reason your dough didn't rise is the yeast. Did you activate the yeast in warm milk/water for about 10 minutes before adding the dry ingredients? And please don't quit. Idk how to motivate you not to quit tbh, but try to take a look at Magic Ingredients (a Chinese TH-camr) videos about buns and bread. She has a lot of tricks and tips when working with wet dough with minimal kneading, I think you'll benefit a lot from her maybe. Idk. LOL. Anyway yeah, you can try do it again but with another recipes on your own pace of course. So good luck!
