Greek Halva Flavoured with Orange Recipe
Ever wondered how to make Greek Halva? It has a unique texture, nor that of a cake or a pudding. Join me on this Spring day and I will walk you through the steps. Ingredients (Metric Measurement)
380 grams coarse semolina
250 mls light olive oil
80 grams slivered skinless almonds
For the syrup
250 mls fresh orange juice strained
750 mls water
Rind of one large orange
400 grams sugar
½ cup sultanas
1 cinnamon stick Instructions
1) Lightly toast the almonds in a fry pan then remove from heat and place aside.
2) In a saucepan add sugar, water, orange juice, sultanas and cinnamon stick. Mix with a wooden spoon and bring to boil. Then switch off the heat.
3) In a large pan on medium heat add the olive oil and semolina, mix with a wooden spoon until the colour of the semolina changes to a slightly golden one. This could take from 5 to 10 minutes but careful not to burn it. (Note: if you have cooked it for 10 minutes and it still has not changed colour it is still okay as it has been cooked for long enough). Proceed by switching the heat to low and slowly ladle the hot syrup mixture into the semolina stirring constantly with a wooden spoon for a few minutes or until the mixture thickens as shown in the video. You can tell it is ready when it begins to unstick from the sides whilst stirring.
4) Spoon the mixture into a plastic mold and pat down with a spoon. Wait 5 minutes then place a plate on top and flip it over, it should come out easily due to all the oil in the mixture. You can use any mold if you like or simply spoon the mixture into small bowls.
5) Let the halva cool for 10 minutes then serve at room temperature.
Halva will last in the fridge for several days and can be eaten cold, however it is most delicious when it is fresh, slightly warm or room termperature.

    Koulourakia - Greek Easter Cookie Recipe Makes 3 large baking trays Ingredients 200 grams white sugar 250 grams unsalted melted butter 3 eggs 125 mls olive oil 125 mls milk 1 teaspoon pure vanilla syrup 1 full heaped teaspoon grated orange rind 760 grams self raising flour 2 egg yolks for the egg wash Mehod 1) In a large mixing bowl add sugar, 3 eggs and melted butter. Beat with an electric mixer for one minute. Add milk, olive oil, vanilla and grated orange rind, then mix until combined. 2) Gradually sift the flour into the wet ingredients whilst mixing with your hand to avoid lumps until a dough forms. Knead dough until well combined. 3) Preheat your oven on 180 degreed celsius. Line your baking trays with baking paper. 4) Take a piece of dough and roll into a ball 3-4 cm in diameter, then roll into a shape. Place on the baking tray and repeat until the dough is finished. 5) Brush dough shapes with egg wash ( 2 beaten egg yolks). 6) Place in oven for 15 to 20 minutes untill golden brown. Check frequently. 7) Remove trays from oven and let cool before storing in an airtight container. Enjoy with tea or coffee. Have a nice day. Honey Syrup Channel

      Hi, use hulled sesame seeds without the bran. I do not wash the sesame. The sesame I purchase is edible without washing.

      Hi, thank you. I have not tested this recipe with only honey. Some other recipes will use only honey and sesame but I suspect the pasteli will not harden as much. You would need to heat the honey to a certain degree so that it caramelises. You could then test it by dropping a teaspoon of the heated honey into a glass of cold water for a few seconds. It should not disperse. Then you would take it out and roll it into a ball and see after a minute if it has solidified.

      Hi, preheat your oven on 200 degrees celcius and bake for around 25 minutes or until the pastry puffs up and is golden brown.

      I've never made it with dried fruit, some people use dried balck currents. You can always try it and see if you like it. :)

      Hi, yes I know I've made it at home with both but I prefer puff pastry when I make it. I like the crunch. I do love the handmade filo pastry though like the one they make at Iordanis in Chania Crete.

      Hi, no butter is needed in this recipe. The custard is made with semolina instead of flour. There are a few versions of bougatsa in Greece and a custard made with semolina is one. Try it and let me know if you like it.
