Garlic is going to be black when the onions are done caramelizing. Can't throw everything in at once. I also didnt see you add sugar to the onion so they'll soften and fry but won't caramelize.
Very nice knife work if I were to give you a little bit advice, I typically take my knife and try to scoop out that bitter white part outs and just cut a smaller end at the head of the pepper still very good technique though👍👍
