Yo I do something very similar but in open air. I have trouble getting more meat on at once because I never thought about that neat little stick trick. Throwing that in the memory bank for the next time I do it.
Very cool how long does it take to dry in open air does it depend on outside temperature?
@@TooMuchOutdoors 12- 24 hours. Humid air can make it take longer to dry, my goal is to let the fat putrefy, and get a bit of create smoke on the meat for preservation. The thinner the meat the quicker it drys. I usually cram it all together on the dehydrator for a short time after to even out the moisture content. I get about two pounds dry with my current system, I could double maybe triple it with that little skewer trick.
