use firm Tofu and press drain well for overnight.
choose the vegetable goes with Tofu minced meat as you like. crunchy vegetable or crunchy salad will be a good combination as Tofu has soft texture. and red pickled ginger will be a good twist for the taste.
【Ingredients】
200g firm Tofu
2tsp fresh ginger (finely chopped)
2tbsp sesame oil
1.5 to 2 tbsp Miso paste
1/2tbsp sugar
1tbsp Mirin
1tbsp Japanese soy sauce
chilli flakes or paste
green vegetable like spinach
sweetcorn
sesame seed
sesame oil

      @@flexi-veggiejapaneseinlond3732 West germany, about 30mins from Düsseldorf (which ironically has a lot of japanese people due to a japanese school i believe). But even the biggest and best shop there only has extremely cheap noodles that just don't do it for me. They're ok, but have some almost "plastic like" smell and flavor to them. Hard to describe. I like it to have a bit better quality :P

    Lotus root has MUCH more than Vit C and carbs. Try to steam it to keep most of it in. Look at the Dr Axe article , he has a great article on just how good lotus root us for you and whats in it. Great recipe.

      @@flexi-veggiejapaneseinlond3732 will do! I came across your video and STILL tried making the onigiri with the long-grain rice. Held its shape for a bit, and then I turned around, turned back, and they fell apart😭 I’ll just go shopping again lol

      @@camerongarey5512 if you go to shopping, try find the short grain rice and make Onigiri. I don't know where you live. but now a days, you can find short grain rice quite easily. The best way is you experience by yourself. if you try to make Onigiri with short grain rice, you will see the difference.

      @@RealGrooveRandom it was in the summer when I was 18 that I decided not to eat meat and fish, at a book shop. Since then, I was vegan for 10 years. Now I eat meat, fish and vegetables with appreciation.

    Do all beans work? Certain beans take longer to ferment? such as chickpeas? (You mentioned for six months)

      @@MDMM-u8y yes, I said it takes at least 6 months. But this is for brown Miso. I fermented my white Miso for 2 weeks in this video, Because it is White Miso. White Miso need double amount of Koji than brown Miso. That is why the fermented period is shorter than brown Miso. Brown Miso need nornaly need 6months to 1year. I can not say all the beans you can use. In Japan mainly used soy beans. But chickpeas, yes. Japanese people who live out of Japan, they make Miso with chickpeas.
