The UAlberta Cinnamon Buns: Home Edition
The U of A cinnamon buns, made famous by the Tuck Shop and later CAB, hold a special place in the memories of grads. Thousands of these buns fuelled students through their studies over the decades. New Trail decided to dig up the old recipe and learn how to make these famous treats so we can share our tips (and our mistakes) with you. This recipe was developed for home kitchens, so don't despair if the result doesn't quite look like your memories. Trust us - ours did not!
Recipe:
Soften 2 packages instant yeast OR 1 oz. Fleischmann’s fresh yeast in ½ cup warm water and 2 Tbsp. sugar
Let this mixture set until the yeast is dissolved (about 10 minutes).
In a large bowl, put 2 cups boiling water. Add 3 Tbsp. margarine, 2 tsp. salt and 3 Tbsp. sugar
Let the margarine melt and the mixture cool a bit. Then add 2 cups All Purpose flour.
Beat this mixture hard until very smooth and creamy (about 5 minutes). Then add the softened yeast mixture, 3 eggs and 3¼ cups more flour.
Continue beating until dough is very smooth. (It should be a very soft dough.) Cover and let stand in a warm place to rise until the dough is doubled in bulk (about 1 hour).
While the dough is rising:
In a flat pan melt 1/3 cup margarine. Set aside to cool.
In a flat dish mix 1 cup white sugar and 1½ tsp. cinnamon.
Turn the raised dough onto a lightly floured work surface. Let the dough set 5 to 10 minutes to “firm up.” Cut the dough into pieces about the size of an orange. Dip each piece of dough first into the melted margarine, then coat it well in the cinnamon-sugar mixture. Stretch the dough piece until it is 4 to 5 inches long and form it into a simple knot.
Place the knots side by side in a 9” x 12” x 2” pan. (Be sure the pan is 2” deep and allow a 3” square for each bun.) Let the finished buns rise for about 45 minutes. Bake at 375 degrees for 30 minutes. This recipe makes 18 good-sized buns.

    Nope, he's doing an American "Orish" accent, which is not the way we speak. Also, that's nowhere near a Dublin accent. What he's also doing is a Northern Ireland (Norn Iron), accent and he just about hits it. I'm Irish and live in Ireland. Try again.

    Thanks so much for putting this video together. The recipe online is technically strong, but a little difficult to follow -- I have made these in the past and was impressed by how good the video was at not only pointing out what to do right, but also some mistakes that can occur. While attending UofA (1982-86), these were possibly the only thing that made me come to campus some days!

    This was a VERY GOOD Lesson! I've seen a few that were just over the top but you going into the physical posture was fantastic and much appreciated. I'll let you know if I get cast.     This isn't exactly wrong... you did a good job for what I would expect from a typical bar inventory. However, if you are looking to elevate this cocktail to it's absolute best here's what you should use; 3/4oz Muerkow Cognac (very distinct and flavorful. Kind of sweet, kind of strong) 3/4oz Cocchi Storico Vermouth (retains it's wine base flavors while also having an interesting richness) 1/2oz Bennedictine (you could try Jagermeister...but this just just works better as it isn't as overpowering and complaints the richness with a balanced sweetness) 3/4oz Rye Whiskey (Some use Rittenhouse, some use Bulleit. I personally will use either Woodfords Reserve Rye or Bayden Hasel Dark Rye. The former is a favorite of mine while the latter compliments the overall richness of the other alcohols used) 2-3 dashes Peychauds bitters (this is what makes a New Orleans cocktail special. It's kind of an acquired taste with it being kind like licorice) 1-2 dashes Angostura Bitters (a more modern bitters that has a certain minty sweetness to it that balances the overall richness of the other ingredients) For garnish, a classic would use orange peel and a dark cherry (if you do use this, then just use the orange peel and just use dark cherry with a very tiny bit of the syrup that it sits in to add a bit of sweetness) I use a mint sprig, one very tiny drop of lemon oil, and an orange wedge. My pallet prefers this as I think it adds a bit of minty acidic-ness that cuts through the sweet and rich base flavors. The Vieux Carre is an old cocktail that has very specific ingredients to make it what it is. Often times this means the cocktail is more expensive and time investing, but the end product is worth it.

    Just gave it a try, very crapy recipe. Way to wet and to must guesstimateing I doubt this was the recipe used in a daily production kitchen.

    I made these and they are delicious! I only had Dry Active yeast and found a site that said I should add 25% more if the recipe called for instant yeast, so I did that (i.e., 2 packages of instant yeast = 16g, so I used 20g of dry active yeast). I also weighed my flour (120grams per cup called for) which I think may have messed up the recipe because after my first proof, when I poured it out on the countertop, it was like a dough soup. An incredible sticky mess! I had to add probably almost a cup of flour to just be able to work with the dough in any reasonable way. Also, considering 18 buns, I used two 9x9 square pans and that worked very well. (I also needed way more butter, sugar and cinnamon than was called for to coat the knots!

      You should make a video tutorial! :) I wanna learn how to sing a really specific song with an Irish accent and I think the first video was supposed to be a northern Irish accent and this one was supposed to be a southern Irish accent... and there are people on both videos saying it's inaccurate so I need all the help I can get haha
