Isi Ewu - Efik method
Cooking Ibout Ebot, Efik style Isi Ewu.
Nigerians are not a monolith. Our cuisine is as diverse as our various cultures and ethnic groups, creating a variety of cooking methods.
My mother taught me how to cook Ibout Ebot.
Required Ingredients:
- Goat Head
- Palm Oil
- Fresh Peppers (Scotch Bonnet, Habanero, or Red Chili)
- Onions
- Ewun (Calabash Nutmeg in English)
- Ntong (African Basil / Scent Leaves)
- Bouillon Seasoning
**Salt - if you desire it**
I couldn't get the butcher to cut the goat heat into smaller pieces, so I had to cook it whole.

Goat Meat Peppersoup - Calabar Style
มุมมอง 8963 ปีที่แล้ว
Peppersoup cooked with goat meat and native Nigerian spices and herbs is aromatic soothing and healing. My style of peppersoup is the Efik style, popularly cooked in Calabar with the name of spices from the Efik language. I believe some of the spices can also be found in other West African languages. I choose to write the name of the spices in the language I am familiar.

Here in 2024 ... Well Details Video, Thanks for Video ❤
Thanks for the stickfish soften method. It was quite helpful. Pls. I over oven dried ny Crocker fish and it is now very strong. How can i soften it to be able to cook it in my stew. Thanks
@mojisolaoguntimehin3260 Thanks for watching my video. You may have to precook the croaker to soften it before adding it to your stew. I hope this helps.
Beautiful recipe ❤
Ive been soaking a piece for over a week and its still not "soft"
How big is your piece? A week is more than enough time to soften the stockfish. The goal is to make the stockfish soft enough to break it apart with your fingers and to reduce the cooking time needed to reach your desired softness. I hope this helps.
@@Ekaete.Kitchen It's about 4" x 5". One chunk of both sides of the fish, and another smaller tail piece that's even harder. I thank you.
Those look amazing
I'd love to try this, but not sure is it plain flour or self raising flour?
Hello, thank you for watching my videos. I used plain flour. I believe self-rising flour will work just as good.
@@Ekaete.Kitchen thank you. Will let you know and share the video in all mi circles.
Hello, what is the use of the big steel structure, you can see right beside the bridge at 5:56 ?

I have never tried it with Banana, but I am sure it will taste just as good. Do have in mind that overriped Banana is smaller and sweeter than plantains. Let me know how it turns out. 😊
What is the song? I want to download
So yummy , I love this.
Love your videos ma.
Thank you for watching
Very straight forward and easy to follow. Any fish recommendations for the recipe?
You can use any fish of your choice. Thanks for watching my video.

Looks good 👍🏾

Very nice 👍
In Uganda we call it matooke
Thanks!
Nice my villiage soup o
That's amazing
Thank you for sharing this video. Please why did you soak the rice in baking powered water mixture?
It helps in softening the rice to make a smoother rice batter when blending the soaked rice. Traditional akanwu/kaun is used, but baking powder makes a good substitute if you don't have akanwu-kaun. Thank you for watching my video.
Thanks for showing us this recipe ❤💙💜
How long do I cook the stock fish after soaking?
Oo
Very original. Lovely video! Could anyone recommend please a good website that sells African spices for shipping in Europe?
I've been looking for this. Please can I add pepper to mine?
Kerala unniyammappam..😀 Zeenu chungom east alpy dist Kerala state. India
So pumpkin seed is egusi?
Melon seeds is egusi not pumpkin seed. Thank you for watching my video.
this is catfish stew. looks tasty anyway!
What kind of oil can I use if I don’t have palm oil?
Palm oil adds flavor and color to the soup. Using any oil other than palm oil will change the flavor of the dish. I would recommend using the oil that pleases you if you don't have palm oil.
Nice dish....I think this is what we call Local rice...
does this solution still lather???
I doubt it will with all the plenty oils and Shea butter. I was even hoping she would show us how much it lathered
Can I use rice flour instead of normal rice
Looks delicious. Thanks for sharing recipe.
I must taste this soup next time I'm in Naija. I didn't know it existed until today.
How can I substitute rice flour to reduce the time it takes? Is it 1 for 1 with the amount of rice?
My sister and Elijah
Thanks for this method. I have been looking everywhere for this native way of cooking coconut rice (exception of the tomatoes) and only find the methods vegetables are added to it. You made my day. I'm cooking this tomorrow.
Hello Hannah, thanks for watching my video, I am happy you found my video helpful. The addition of the tomatoes is my own personal touch to our native Edesi Isip (coconut rice).
Is this fish stew or soup for eating eba? Because this is NOT Efere Ndek iyak. No greens or vegetables except crushed peppers, onions and tomatoes. Tomatoes in Efere? Sorry. I’m a native of Ibibio land and if you cook that for your husband to eat soup, you would have be recalled to your mother’s house to learn cooking. Don’t do that anymore. Please!!!
Adora Faye, thank you for watching my video. This Efere Ndek Iyak is what I grew up eating with my Efik parents, who taught me how to cook the soup. There are a wide range of soups and methods that many have not been exposed too. I encourage you to cook your own method and enjoy. Thank you again for watching my video.
I got you! But do some research before cooking any native dishes because when the natives watch, they will give their opinions as to what is authentic and what is not. Have an open mind and be receptive to constructive criticism!
@@adorafaye5886 I've been searching for fisher man soup recipe and this is the only method that comes close. I think this forms the base of all the variations out there. We add loads of seafood in our fisher man soup with this same base recipe....maybe a thickner (garri or cocoyam) im 100% sold out to her method
Why do u use to much oil?
Thank you for my watching video. Palm oil is essential in my culture, it enhances the flavor of our dishes. I added the adequate amount of palm oil per my cultural norms. But you can use less palm oil if you want to.
