BHUNA CHICKEN MASALA | CHICKEN LEGS BHUNA | CHICKEN FRY | CHICKEN BHUNA
Bhuna Chicken Masala | Chicken Legs Bhuna | Chicken Fry | Chicken Bhuna
Preparation of Bhuna Chicken:
1. We have used 500 grams of Chicken Legpiece. However, you can use any type of meat (but not boneless).
2. First we will marinate the chicken for 30 minutes with salt (1 teaspoon), turmeric powder (1/2 teaspoon), Kashmiri red mirch (1 teaspoon).
3. In the meantime let's prepare the fried masala.
4. Take a pan and heat it on high flame.
5. Add 1.5 teaspoons of coriander seeds.
6. Add 1/2 teaspoon of fennel seeds.
7. Add some Cinnamon, Cardamom, Black Pepper & Cloves.
8. Dry roast for 3 minutes on high flame.
9. Let it cool for 10 minutes.
10. Grind it to powder.
11. Once the chicken is fully marinated, take a deep fry pan/Kadai and heat it on high flame.
12. Add 2 tablespoons of ghee.
13. Add the marinated chicken legs and roast it for 5-6 minutes.
14. Take out the chicken and add 3 tablespoons of refined oil.
15. Add a bay leaf, red chili, and 1 teaspoon of cumin seeds.
16. Add 200 grams of chopped onions.
17. Fry the onions for 10 minutes on medium flame.
18. Add 2 tablespoons of ginger garlic paste.
19. Add tomato puree (grind 2 medium-sized tomatoes to paste).
20. Sear for 4-5 minutes.
21. Add 1 teaspoon of red chili powder.
22. Add 1 teaspoon of Kashmiri red mirch.
23. Add 2 tablespoons of water.
24. Add 100 grams of curd.
25. Add salt to taste.
26. Add 3 slit green chilies.
27. Mix everything and then add the roasted chicken legs.
28. Add the prepared spice mix & mix everything.
29. Add 1/2 cup of water and cover it. Let it cook for 15 minutes on low flame.
30. Serve hot.
