Yes, there is a Midrash that discusses this idea, although it's not found in Rashi. The Midrash that mentions Jacob planting the trees in Egypt for later use in constructing the Mishkan (Tabernacle) is found in Midrash Tanchuma, a collection of homiletic teachings on the Torah. Specifically, it is mentioned in Midrash Tanchuma, Parashat Vayakhel, section 9. In this Midrash, it is said that Jacob foresaw through prophecy that his descendants would be enslaved in Egypt. Therefore, before he died, he instructed his sons to plant trees in Egypt. Jacob told them that these trees would be used by their descendants for the construction of the Mishkan when they eventually left Egypt. It illustrates the foresight and providence of Jacob in preparing for the future needs of the Israelites.
