Honestly, in my opinion, I don’t think Gabriel would win one reason is it takes way longer to beat Minos prime Gabriel on the other hand is pretty easy to be, and if you’re really experienced at the game, you could probably beat him in about a minute

Gameplay wise and lore wise, the 2 prime souls are stronger than gabriel. However, because they are both bots, they would get close the their enemy most of the time. Meanwhile, gabriel has a skill (the swords rotating around him) that prevents the player or his opponent to get close. That means, if the prime souls get close to gabriel (which they will do anyway) while he is having those swords, they are going to take a boat load of damage. If it wasnt for that skill, the prime souls would likely win (This is only my guess, i havent tested this to see if its right or wrong, so i dont really know)

For y'all wondering, in the new update sisyphus absolutely OBLITERATES gabe in this fight, now that his and Gabe's AI function properly. He can even take me spawning in a second Gabriel (after the first is dead), but finally loses to a third.
