My recipes are based on what's traditional in Singapore and some fusion throughout the years of me cooking as a mom. Some recipes I learnt from friends and relatives, cafe or hawker owners when they are so generous to share some of their recipes. Non traditional recipes will also be shared (definitely because they are delicious or simply easy to make!)
As my children couldn't handle the heat of the usual Aglio Olio that comes with some chilli flakes, I made this after googling around and discover that non spicy version is really simple delicious to make.
Ingredient
4servings Dry Sphagetti (instant cooks faster but lose on texture. The brand I got comes with instant and standard so I grab the standard version)
2-4 tomatoes (each size of adult palm, choose ripen reddish ones if possible)
4-5 cloves garlic
200gm streaky bacon
Olive oil
Salt and black pepper
Half tsp sugar (optional)
Methods
1. Boil pasta based on the packaging (do not add oil to pasta to control the amount of fats in the dish)
2. Crush garlic and then peel
3. Minced the peeled garlic
4. Cut the bacon into 1 inch pieces
5. Wash the tomatoes. Chop tomatoes into small pieces (you can choose to remove the skin by making a cross slit on the bottom of tomato and boiling the tomatoes until the skin soften usually a short while and remove the skin. I kept the skin as it is nutritious)
6. Put olive oil in pan (you can add more since I didn't add oil to the Sphagetti. Try not to have overall too much oil for a healthy version for children)
7. Once warm, add bacon and fry around 1 minute
8. Add in garlic (do not add when pan is too hot. Burnt garlic is bitter. If pan is too hot and garlic is turning brown too fast, add in the chopped tomatoes asap. If you really burnt the garlic, you will need to remove the burnt pieces before proceeding on)
9. Add in tomatoes and stir fry until some fluid appears in the pan (if ur pan remained dry, you may add in half cup of plain water (for healthier version, I do not recommend adding stock)
10. Add in salt and black pepper. Taste and see if it is too sour for the kids, if so, add in some sugar)
11. Once wellmixed (if you have added water, it must be boiling). Add in the cooked Sphagetti and fry to mix well. (if your pasta is sticking together and frying did not help, just add a little water at a time. Do not over do with the water as Sphagetti soften each time there is water in the pan)
12. Once we'll mixed, turn off the heat and serve.
This pasta can be made into freeze food and warm up in the microwave. I tried it and the taste is not bad.

孩子吃不了平时的Aglio Olio,因为带一点辣椒粉,所以我就在网上研究了一下,这道面食就很不错。简单又营养!
Ingredient
4人份 干意大利面(尽量不要快熟款,口感会不太好. 煮好后不要拌油,会比较好控制脂肪含量)
2-4 大番茄 (越红越熟越好。可以去皮但我保留番茄皮是为了更营养。)
4-5 片蒜
200gm 熏肉
橄榄油
盐和黑胡椒粉
半小勺白糖(可不要)
1.根据包装袋的指示煮好面
2.蒜剁碎
3.番茄剁碎
4. 熏肉切成1寸宽
5.加橄榄油在锅里,烧热
6. 加入熏肉,炒1分钟
7. 加入蒜(要注意不能把蒜炒胡,如果糊了要取出,不容面会苦)
8.炒香后加入番茄,煮到出水(如果锅里没水就加半杯水,煮到水滚)
9.加入适量盐和黑胡椒粉。尝一尝味道,太酸就加半小勺白糖中和一下。
10。抄均匀就能关火,上桌了。(如果你的面粘成一团,炒的时候还是分不开,加一点水能帮助分开。千万不能加多,不让会太软。
这道面食可以冷冻再用微波炉加热,味道还是不错的。

      Pickled sour mustard. Better to taste test before soaking, if salty then soak longer, make up the sour taste by adding white vinegar during frying

    请问咸菜切好后需泡水多久才捞起?

      因为不同的咸菜的咸度不同,你泡水之前拿一点咬一点尝尝,如果很咸才泡水,切丝泡能快一点,泡半小时再咬一点试试,如果咸度可以就能炒,如果还是很咸就换水继续泡。我有时泡过头就在炒的时候加盐。。

    请问蒜蓉下锅炒是用中大吗?炒咸菜需要30-40分钟全程应该都是用中火吗?我如果不加白米醋可以吗?

      中大或中小火都没关系。。 不同是那锅气。。 加醋就会有酸味。。如果你的酸菜本就很酸就不用加了。。 酸味开胃

      Actually if no wine.. Suggest add more ginger or add in spring onion.. Mainly to reduce the porky smell.. Wine cannot add too much, if not dish will be bitter.. So if the smell is ok with u, u can skip the wine

      I noted that different dialect like their dumplings differently, if yours prefer sweeter taste or saltier taste.. Suggest to try after frying the pork and adjust.. For the rice, must add enough salt.. The boiling water also need to add some salt.. If not the dumpling will taste bland on the rice..

      Boil the Trotter till u dun see any blood oozing out of the bone. Cause different cut size and sometimes there are more blood in the bone.. Can't set a specific time.

    Thank you for sharing. Are you familiar with the braised pig trotter recipe that uses red fermented bean curd? It is another Southern Chinese dish. If so, can you show how to make it? Sometimes tofu skin is stewed in it as well.

      The recipe here does not add in the fermented bean curd usually. However, we do add in egg, tofu and tofu skin, even tofu puffs.

      This is actually more on the basic side. Versatile enough for most recipes, you may adjust the taste to sweet, sour or spices infused sambal. Quite good.

      Not the same. Dark soy sauce is only salty with no sweetener. And the flavour is different from sweet soy sauce as well. 😄

    Please don't cook the pork mince for 15 to deepen the flavour because the pork mince will become too meaty and dry as in over cooked
