Fired up the Chargriller Akorn Kamado today and cooked a couple slabs of babyback ribs and enjoyed some 10 Year Russell's Reserve during the cook. Cooking method: - Cowboy lump charcol - Pecan wood - Light coat of peanut oil before applying the rub - 3 hours uncovered at 240 - 1 hour wrapped in foil with butter, clove honey and turbinado sugar - 1 hour uncovered with a light BBQ sauce glaze Rib...

Some people prefer "low and slow" when it comes to cooking a pork shoulder. I've found zero difference in a pork shoulder cooked for 16 hours at 225 and one cooked between 275-300 in about 8 hours. In this video I show you my process for knocking out a pork shoulder in less than 9 hours for the perfect pulled pork.

Correct. I usually have the vents barely open throughout the cook to maintain consistent lower temps.
