Carrot and chickpea blondie bars | VEGAN RECIPE
I really wanted to make some chickpea blondies and I also had tons of carrots, that’s how I came up with this weird, but delicious idea!
Give it a try, you’ll probably won’t regret it!
Carrot base :
- 1.5 cup oats
- ¼ cup dates
- ¾ cup shredded carrots
- 1 1/2 mashed banana
- 1 tsp cinnamon
- ¼ cup shredded coconut
- 3 tsps coconut oil
- 1 tbsp flax seeds
- ¼ cup buckwheat
Mix all the ingredients except the buckwheat.
Add the buckwheat afterwards and spread into a baking tray covered with parchment paper.
Blondies :
- 1 cup drained chickpeas
- 1/2 cup oats
- ½ cup mashed banana
- 2 tbsps tahini
- 4 tbsps maple syrup
- ¼ tsp salt
- ¼ tsp vanilla extract
- ½ tsp baking powder
- ½ tsp baking soda
- ¼ cup chocolate chips
Mix all the ingredients (except the chocolate chips) until a smooth texture.
Add the chocolate chips and spread on top of he base.
Put the whole thing in a preheated oven at 180c for 20min.
Let cool for 30min. and slice!
Version française :
Base à la carotte :
- 1.5 cup de flocons d’avoine
- ¼ cup de dattes
- ¾ cup de carottes rapées
- 1 ½ banane écrasée
- 1 tsp de cannelle
- ¼ cup de noix de coco rapée
- 3 tsps d’huile de coco
- 1 tbsp de graines de lin
- ¼ cup de sarrasin
Mixez tous les ingrédients, sauf le sarrasin.
Ajoutez le sarrasin et répartir l’appareil sur un plat à brownies couvert de papier sulfurisé.
Blondies :
- 1 cup de pois-chiches égouttés et rincés
- 1/2 cup de flocons d’avoine
- ½ cup de banane écrasée
- 2 tbsps de tahini
- 4 tbsps de sirop d’érable
- ¼ tsp de sel
- ¼ tsp d’extrait de vanille
- ½ tsp de poudre à lever
- ½ tsp de bicarbonate de soude
- ¼ cup de pépites de chocolat
Mixez tous les ingrédients, sauf les pépites de chocolat jusqu’à obtenir une texture bien crémeuse.
Ajoutez les pépites de chocolat et répartissez au-dessus de la base.
Mettez le tout au four préchauffé à 180c pendant 20 min.
Laissez refroidir 30min. avant de couper !

Made a large batch this evening to use up some frozen kidney beans since I’m tired of chili. Tripled the recipe and turned out really well. Usually when I experiment something goes wrong and I regret it. Will definitely print out a copy for another day.

you're adorable! love that you're so passionate about veganism at such a young age. A lot of my friends are models and I've found that they're mostly vegan too! That's why I decided to start my cooking channel with different models cooking vegan and vegetarian dishes! Anyway,I think it's great you are doing such a strong and bold move at a young age.
