TLDR: sign up to an account using your email address and you get a public Eth address. Send Eth to that public address. When you make transactions from your account they happen simultaneously on your device and their servers. If someone logs into your account then they cannot make a transaction as they don't have your device, such as a phone. It's possible to include more servers / devices in the approval process. If a server goes down you cannot make transactions though they have great uptime and a separate service to get your Eth out. Basically instead of having one piece of secret information (seed) a thief needs your login information and your physical device + be able to login to your physical device. Regarding government stealing your crypto they can permanently shut down this company though they cannot steal your funds directly (if it works as described). You then rely on their other recovery service.
