Favorite Italian/Irish family recipes as well as classic New England comfort food. Each recipes is created with the beginner cooks in mind. Our videos tend to be longer videos than average, because Mark will show you step-by-step how to create each recipe.
How to make Cottage Stew
Packed with Sweet or Hot Italian sausage, ground beef, potatoes, carrots and onions braised in a thick & creamy tomato and beef broth stew.
Ingredients:
1½ - 2 pounds Sweet or Hot Italian Sausage or a combination of both.
1 pound 90/10 ground beef
1 large onion
1 pound baby carrots (Pre peeled and washed) If the carrots are thick you might want to cut them in half to speed up cooking time.
1-2 tablespoons olive oil (Used to saute the vegetables)
2-3 tablespoons tomato paste.
1 pound gold baby potatoes cut into quarters (or bite sized pieces)
8 celery stalks sliced thinly
1½ - 2 cups Beef Broth
1 28 oz. can of crushed tomatoes
¼ cup fresh parsley, chopped. I used 2 tablespoons freeze dried parsley.
2-3 bay leaves
1 teaspoon Seasoning Salt
½ teaspoon fresh ground pepper
Salt to taste.
I believe I may have said to simmer for 40 minutes in the video, but keep in mind the simmer time will depend on how tender you want the vegetables. This particular batch the carrots took about 60 minutes.

First if all ,what makes " Boston baked beans different is not baking soda. It is " Dark molasses and dark brown sugar. Only one peice of salt pirk was used to flavor the beans, Not small pieces mixed in. . That is the Original recipe. Stop giving false information. Thank you. Original Boston Boy.😊

This is a recipe you don’t see too often and I laughed and cried when I saw what you were making. Lol! I had a wonderful friend who lived just outside the French Quarter in the By-water neighborhood and he made this for me one stormy, humid New Orleans night. Thank you for an old lovely memory and thank you for sharing. This is pure sacrilege to mention this but Tony Chachere has instant roux but you will never find it in anybody’s house! Hi, I used to make pastry cases, mainly for quiche which my family have always liked. One day, I started using filo and pastry because it was healthier and never really went back until recently. I have been teaching my adult daughter to do it by hand, now i have arthritis and decided to invest in a 2.1 litre food processer, it works smashing. Nice to see you get your mojo back with this.

I bet a nice White Wine would be GREAT to deglaze the fond off the bottom of the pot and then burn off. Even though booze in an Etouffeé wasn't a thing with that Creole/Cajun dish. Would be cool to experiment with it.😋💖🥰

That recipe was absolutely perfect! Great job as always and thank you both. Who knew there was an automatic paper towel dispenser for home use? Of course I have to have one! Lol. The next time I’m in New Orleans I’ll make it a priority to send you guys a King Cake. I was so shocked and horrified by the event that took place on Bourbon Street during New Years! Hi Mark and Wade! This hamburg - hashbrown casserole reminds me of a cottage pie. Although with the intriguing twist of using hashbrowns instead of mashed potatoes and added cheese. I 'm definitely going to give this a try.

Thank you Mark and Wade, I will pick up the ingredients this week at the market. At school they did not include the spaghetti like noodles though. The chicken chow mein was served over rice and topped with the crunchy chow mein noodles. I do recall plenty of the delicious sauce over it as well.
