It depends on the coffee, but generally I'm somewhere between 11 and 13 on the Sette. FYI I am using a non-pressurized basket, i.e. not the one that comes with the Bambino.

According to Fellow, They recommend their own filters, but Kalita 185 and Blue Bottle filters work as well. I am possibly heading down a similar route. I am torn between buying the Hario Decanter size 03 with a Kalita 185 ceramic dripper, or the Fellow Stagg XF. If i buy the fellow, i am going to test the cheaper alternatives.

@@easytiger266 yeah, fellow recommends there filter and then gouges you for big dollars$$$!!!! I found a Chinese made filter with a little bit of a fold. It fits perfect. They’re reasonably priced, but I’m sure to rinse them since they’re from China. It does rinse the paper taste out very quickly by rinsing with hot water.

Not yet, but I am thinking about it! I think I'm still struggling in consistency with my tamp, but I think better distribution will help too.

The XF is bigger, usually for two cups, while the X is for one cup only.

Yes, the Bambino comes with a pressurized basket, but once I got the Sette, I upgraded to a non-pressurized basket.

@@kenroman777 the K-Max is _phenomenal_. I have yet to use a high end electric grinder that could reach the same consistency. It's a little more work, but you aren't missing out on quality in your grind. Incorporating the Sette will just save your arms a bit, imo.

Hello again! So I’ve been enjoying my journey. I did graduate to a V60 and upgraded from the Fellow Ode gen 1 grinder to the Fellow Ode Gen 2 grinder with the upgraded SSP MP burrs $$$. I still use the Fellow Stag XF with certain beans. Others, I just have to go with an ultra fine grind and use the V60. I definitely appreciate your insights on the different products. So for me, the Fellow Stag XF is kind of like your first electric guitar. It’s basic enough, yet offers one with enough complexity to learn and grow. The V60 on the other hand is more of a nylon string classical guitar. It’s significantly more complex and unforgiving, however, with it’s complexity comes enormous utility and a much broader user index. I’ve greatly enjoyed this extraordinary journey and your contributions to the pour over coffee aficionado community are most appreciated! Thank you so much for all you do! John.

Sometimes the clever can clog when you go coffee first. Water first helps with this and it drains in about 45 to 60 seconds instead of 5 to 6 minutes when the clogging happens

I'd absolutely recommend water first. You get a much cleaner, sweeter result that way. It's prone to clogging and a longer drawdown time if you add coffee first, neither of which helps the flavour (unless you actually like that in which case do what you want 😂) James Hoffman advocates water first as well, and he's very rarely, if ever, wrong about these things.

Totally agree, it’s fascinating to me how reliable the Clever can be compared to traditional pour overs. It’s a nice balance between an Aeropress (almost too many variables to control) and a V60 (too few). I’ll have to check out the Switch!

Thanks for the encouragement, glad you liked the video! Got another one in the edit right now, where I give the D3 and AT2021 a more fair comparison by positioning them in the same place as the AT2020, stay tuned for that comparison! I think that the AT2020 definitely has a more open sound than the v7, with crisper high end coming straight out of the mic. However, the tradeoff in echo in an untreated space is definitely something to consider, especially if you don't want to do a lot of work in post to remove the reverb. I currently use Izotope RX8 to get rid of reverb for my podcasts, and it takes a lot more attention than the sE v7 to get that out. I think that if you like the sound of the AT2020, it would probably be easier to EQ the air frequencies of the v7 than it would be to get the AT2020 and deal with the reverb. The next video also has some examples of what these mics sound like after running through RX8 and Nectar, just gotta wrangle all the audio in the timeline properly, haha!

@@knowyouryoga Yeah, I would stick with the v7 and just make a parametric EQ preset with a gentle boost to frequencies from 4k-8k. The AT2020 would probably require more work to reduce reverb, and may not be good value for what you're looking for. You're totally right on the end, still learning and working to improve the flow of my videos from start to finish. But to answer your question, totally, you can easily brew from the XF dripper into the Carter Move, I don't think it'll be a problem at all. Given that both the XF and the Carter are vacuum insulated, the one thing I'd say is that your coffee will stay hot (maybe even too hot) for a long time! But that might be a good thing, depending on how you drink your coffee. Mine never lasts that long ;)

Totally! I think the most common question I get from people just starting in coffee brewing at home is whether they should get a French Press. I think they make great coffee, but can be fragile/hard to clean and accumulate off-flavors in the metal parts. The Clever gets around a lot of that quite nicely.

You touched on a great point with blooming, I actually cut my discussion of that from the video for length considerations, but I personally don't think you need to bloom with the Clever. I see the purpose of blooming for percolation methods (e.g., pourover) to allow the coffee to degas, which will limit off-gassing as the brew draws down in subsequent pours. For the Clever, you can control that effectively with the amount of time you let it extract, so I think that it's not necessary. I think the Clever is actually most analogous to the AeroPress. Although some people do recommend blooming with an AeroPress, the amount of people winning Championships without a bloom suggests to me that you don't need to bloom with the Clever either.

Totally! I still use my ceramic V60 that's over a decade old, it's a champion for sure. I did find that my Hario Slim hand grinder was making it hard to get the best results, and once I started brewing V60 with my Sette or my Aerspeed, the results improved dramatically.

You're totally right, I missed out on the opportunity to share that info. I think that all of the three types can produce great coffee, but here are my takeaways. The Kalita and the Fellow produce very similar coffees, which makes sense if you compare the geometry, filter paper, and hole size. Compared to the V60, these two drippers produce coffee that's has more body and intensity. I think the reason for that is twofold: they both restrict flow to a degree, and they both are going to retain heat better than my ceramic V60. All in all, I think the Kalita and Fellow will be more forgiving at coarser grind settings than the V60, but you won't be unhappy with any of them. @@ThunderRunner I think that any of these could work for most coffees, but I think you will get a better control over dark roasts with something that is less restrictive, like the V60.
