Why is it dangerous?
it contains live larvae which eat part of the cheese nside and after digesting it the final cheese has a very unique flavour and consistence. The problem is having live larve in your cheese can create disease, even if it's actually very rare because the people of sardinia have been doing that cheese for themselves for centuries and they still do some of that, and nobody get sick, but if not done properly it can become dangerous.
