I actually had an event ending mechanical last year. My chain wedged itself between the spokes and cassette. Got to ride with SAG and got dropped at a rest stop where my wife got me and brought me back to the velodrome. As far as changing, there's restrooms at the velodrome which will be much better for changing than at your car.

32:54 you recommend butter/ghee?!? Do you accept that SFA above ~8-12% of calories markedly increases risk of heart disease? (this is the current consensus) If so... Why are you recommending cooking with butter which is loaded with saturated fat? If not... Well, it'll take more than a YT comment to go into that, but this is well established in the literature. Look at Hooper 2020. A meta analysis of RCTs. Paper title is "Reduction in saturated fat intake for cardiovascular disease"
32:00 what's your evidence that seed oils are unhealthy? Because I have read LOTS that says the opposite. Obviously ultra processed foods are unhealthy as they are hyperpaletable and can easily lead to overconsumption of calories... But when studies look at seed oils alone, they are not pro-inflammatory, they reduce LDL and apoB, and they are associated with good health outcomes. Here's a few: Soybean oil lowers circulating cholesterol levels and coronary heart disease risk, and has no effect on markers of inflammation and oxidation "Soybean oil does not affect inflammatory biomarkers, nor increase oxidative stress. Replacing dietary saturated fat with soybean oil lowers low-density lipoprotein cholesterol levels." Comparison of canola oil and olive oil consumption on the serum lipid profile in adults: a systematic review and meta-analysis of randomized controlled trials This one found that canola oil lowered LDL compared with olive oil --- I know it's trendy to say that seed oils are bad for us, but this is mostly a misunderstanding of the research.
28:00 nothing wrong with coffee! Maybe mushroom drinks are even better, but human outcome data suggests coffee drinkers have better health outcomes. Check out these: Coffee Consumption and Mortality From All Causes, Cardiovascular Disease, and Cancer: A Dose-Response Meta-Analysis (16% lower all-cause mortality for 4-cup-a-day drinkers; 21% lower for 3-cup-a-day drinkers when compared with non-drinkers) And this... Coffee consumption and health: umbrella review of meta-analyses of multiple health outcomes Just don't load it with sugar :)
In the span of a minute (7:30-8:15) you recommended up to 40% calories as protein (?!?)... I'm 85kg and I eat about 2800 calories a day. If I was to eat 40% calories as protein that would be 280g. Moments later you said 1g/lb was too much... That would be eating 180g of protein a day. You said "it's actually 1-1.5g per kg" (so that's 85-128g per day... Which would be 12-18% protein per day) So which is it? Are you recommending 40%/280g... Or 12-18%/85-128g?

Oh my gosh, my son took on one of those hills on a bike without brakes, lost control, flew over handle bars, hit his head and had a massive seizure. Ended up in the hospital getting gravel dug out of his whole back. I’m now wondering if he nicknamed that hill 😬 Great interview! Thanks!
