I thought a cut was a single very quick grace note, or sometimes a double, and I thought what you are showing is a triplet.

Great Vid.... I am not certain when to use the individual bowed triplet, aka the cut as you've shown vs. other ornamentation that produces a similar sound? For example; in the "B" part of Cooley's Reel, from the open E down to the B (on the A string) ~ it feels like there's a triplet E B BBB(3), but I can also play this with like an aggressive BDB grace note... Thanks again for helping us learn Irish style fiddling.

How is a cut written on the sheet music?

Rare to see an online teacher cover bowing. A lot of fiddle teachers kind of just shrug and go "I dunno you just kind of do it." Thank you for this detail!
