April is my favorite month here in North Florida. Everything is alive, bright green and blooming. Fantastic time to eat fresh from the yarden.
It's also the busiest month, where projects are pushed through before teh summer heat and humidity sets in.

Idalia hit early morning on August 30th, 2023. All things considered, we got away with a black eye. So much work though, SO much work ahead. The entire county was out of power. Today, 4 days later, 18,000 of 28,000 connections are still not restore. We are amongst them. Tanksful for a pool that hasn't turned green yet. :)

Raised beds rotting? Fire ants? Flooding? Voles, moles and pocket gophers? Drought? Planters too small? Tired of gardening at ground level? Here's the solution - BATHTUB GARDENING! :) We use enameled steel tubs. Indestructible! Cast iron tubs are too cumbersome to move around. Vinyl may work, but also deteriorate in the elements, and perhaps crack from the weight. Reuse - reduce- recycle! :)

    Is that a North Florida accent? So it's late September here (southern Illinois) and I have several green tomatoes left on the vine. Won't be long until it frosts. Should do something with some of them before then, this looks interesting. So...a Tbsp. salt per quart jar. Sounds way salty. A couple of hot peppers, garlic, peppercorns, celery seed, And you promise that if I fill my jars with that much water, they won't expand and overflow. They always do. I have the jars, weights, every kind of airlock they make, and some they don't. Oh, and the gloves too. I might try this tomorrow. I ate a half a jar of (vinegar) picked green tomatoes this morning. And my half gallon pickling crock is full of hot banana peppers, garlic, and dill. Just experimenting. The other comment about adding horseradish sounds fantastic.

    I looove turkey tail. People are a little scared, but their flavor really is more pork than turkey. I buy them fried at a Mexican bakery. Chopped meat with eggs, in stir fry w/ rice or noodles, with bbq sauce like pulled pork sandwiches… it’s very versatile

    I did a fresh ivy leaves wash with washing soda yesterdsy and attest that it works. However, it doesn't provide the fresh smell the washing liquid gives and thats whst i miss.

    The venting is a safety feature to guarantee pressure maintenance internally. A metal canner vents too so it's the exact same in both canners. Mine has been great and is the only one I trust to pressure can in. My IPMAX gave up on me after a year and cost double what I paid for the NESCO.

    I really hope she’s removing the red and green berries. Elderberry is fully toxic until ripe. Even then, it must be cooked before consuming.

    I just saw this and wondered why there were so many negative comments. Until I watched it. You did EVERYTHING wrong. Seriously. Everything, You were supposed to put 2 quarts of HOT water in it. Which you didn't do. The lines inside are for cooking not canning. You CAN use regular mouth jars. Everyone but you has done it and it worked perfectly. You were also supposed to unplug it and let it sit an hour when it says OFF. Which you DIDN'T do. Had you done that, there wouldn't have been the water drip from the lid. And since it was on Exhaust, you should have known the E was for exhaust. Worst review I've ever seen.

    0:10 people use the word exponentially to explain rapid growth when they don’t seem to comprehend the actual meaning of exponential growth meaning it doubles each generation you start with one then the next generation is the third generation is four. The fourth generation is eight the fifth generation is the sixth generation is 32 the seventh generation is 64. The eighth generation is 128 the ninth generation is256 and the 10th generation is 512 and it just keeps doubling every generation. Nothing grows exponentially certainly not bugs the only time you actually see true exponential growth in mathematics.

    ill prob just have to try it with my clothes. im old enough that im past the point where i care how clean clothes look, as long as i get most of the grime and most of the smell off the clothes. no one ever talks to me to say anything good or bad about anything and its not like im getting fired from work for imperfect clothes (if anything, i would save money in general due to not buying regular laundry detergent, rather than losing money due to losing my job), so i only focus on saving bank and finishing stuff >80% effectively.

      I take the bands off after the jars are cooled and then wash them in the sink with warm water and some dish soap. Rinse,, dry and on the shelf they go. :)

      Oh I wish! I constantly get things wrong, run into new challenges or want to give up all together. North Florida is a tough area for food growers.

      Gainesville has a fantastic fb group, if you're interested. "Grow Gainesville". Many knowledgeable people in it. They even meet in person for lectures on certain topics. :)

    I totally and completely LOVE my Nesco! I got it a couple months ago after watching Rosered Homestead testing of it. I'm alone, 62 and new to canning. I also have a glass top electric stove so can't pressure can on it. So this one meats my needs and works wonderfully for me!

    did you need a permit to build your homestead? and did you build it yourself or is a licensed builder mandetory? we have land in okeechobee 1.5 acres. wanting to build something.

      Our home is a 1908 farm house. :) But yes, if we were to built today, even a garage, permits would be needed. You should contact your local building department (things change based on county/city), and they will give you a permit application that will state everything they need before you can break ground. Despite us being very rural up here, it's not even allowed to live permanently in a camper.

      One could reduce the liquid to concentrate it, but that seems a lot of use of energy for no good reason?

    Fresh leaves are so easily available so Im interested in the use of the fresh leaves. They are available even in the winter! I find that amazing!

      I used fresh leaves as well for comparison. Skip to 6min 15sec. At the end is the comparison of dried vs. fresh on stains. :)

    I have had this about 1 1/2 years. I LOVE it! If you ever own other brands of pressure cooker, you will have petty little differences too. I owned 3 electric pressure cookers, I wore out before stooping to an Instant Pot. I have adjusted to it, but it's not nearly as good as my previous ones. I don't find the things you complained about bothersome. As for the wire, US Govt requires short cords. A non wired cord as in the IP, will wear out much quicker. Hope you findbone you enjoy more, but this is not an actual review of this canner but preferences.

      They are like babies. Once they bloom they get checked daily to see what is setting and what was stolen by the birds and squirrels. :)

    Why do you cook them ? It kills the goodness they've achieved from sprouting !!!! They're so healthy raw...

      I cook them because I like them in recipes. Same for sprouted lentils. We eat plenty of raw and fermented things, so no worries about missing out. :)
