Yes, Tequila & Mezcal tend to dominate any cocktail, you really have to love the taste to embrace it in a cocktail, let me know your thoughts if you try it and thanks for watching!
Mahalo Justin, this is awesome!! I'm not of Italian or Sicilian decent at all, but I love cuisine, and you're right, it's always important to serve something to eat, along with some delicious cocktails! I can't wait to try your meatball recipe. You've got onion listed twice - is that intentional? So you need finely diced AND "chopped fine" onions? I'm no chef so I just wanted to clarify. Cheers!
Thanks Adam! Finely diced (like in a food processor) or chopped fine either way is "fine" lol, I have to go back and look but one small onion is plenty, probably a typo since I use a template for the recipes and it was probably "stuck" in there from last time. @@TikiTriangle A recent favorite is the "Getaway Car" from a place called The Raines Law Room in NYC, which I know nothing about (maybe you've been there?), but it's a great drink: 1 1/2oz pineapple juice 1oz dark rum (I used a 50/50 blend of Appleton 12 and Plantation Stiggins Fancy) 1oz Ancho Reyes liqueur 1/2oz lime juice 1/2oz simple Flash blend/open pour. Brilliant!
@@adambhoy Nice! What was in that? I am very familiar with both Raines Law Room locations, its an interesting Law, it allowed people from out of the country to drink during prohibition if it was a hotel, so they put beds in a room, called it a hotel and made it a speakeasy! Garret J. Richard often hosted Tiki Popups there prior to the Pandemic, fun stuff!!
@@TikiTriangle That's an awesome history of the term, thank you! I'll bet having access to Garret's drinks on a regular basis would be pretty cool! I put in the recipe in my comment above, you should definitely make one! It's pretty easy, no esoteric ingredients really.
@@adambhoy Yes, it was very very cool to have seen Adam semi-regularly before the pandemic, quite a wealth of information. You should check out his book too for more of his recipes! TROPICAL STANDARD.
Looks interesting indeed! We're lucky enough here in the midwest to get white grapefruits in the first couple of months of the year when they're in season, but even then they can be pretty hard to find. I usually buy a bunch, squeeze and freeze them in little pucks using a silicone mini-muffin tray, and then use those in drinks. When that supply runs out I've got some emergency bottles of the Ocean Spray Pure brand stuff, but I feel like they might not be selling that anymore. It's my greatest fear that these ingredients will cease being readily available haha!
Honestly, I've had nearly every cocktail I love with white vs. ruby/red graperfruit and prefer the ruby. White I loved when I was younger and we can still get it. I like to taste/test cocktails with both, especially for the retro/nostalgic taste of white, but I can see why ruby has replaced white here in the NYC metro. As for freezing, they will loose some zip and get more acidic, but frozen is better than pasteurized any day. Try making Super Juice like in episode #2457 THEN freeze it, I think you have much better results... let me know if you try it!

I really enjoy a Puka Punch, and a Tradewinds is probably my number two cocktail pick.
My favorite cocktail is Three Dots and a Dash. I enjoyed the inclusion of your Manhattan video. And OMG... How the heck have I not thought to use bottled water to make ice! I have a Fridgidaire counter top ice maker and instead of using my filtered tap water, I need to buy better quality bottled water for my high end liquor cocktails.

Thanks! Love a Jet Pilot! The problem is I can only have one these days, most don't realize it's simply just a variant of a Zombie, but I love the addition of cinnamon syrup rather than grenadine. One drink Lee's knows how to make correctly is their own version, known as the Islander Zombie - PROCEED WITH CAUTION! Cheers!
Great video (RIP Brother Cleve) of a classic space. I didn't realize how big Lee's is. Hopefully it can be preserved. What's the dish they light on fire? Looks fantastic. The Tiki Tiki could use some help. I added 1/2 oz of honey, a dash of bitters and a few drops of Pernod, and it's quite a bit better. If I had to do it again, I'd remove an ounce of the light rum and replace with a half ounce of 151 Demerara. Okole maluna!
They had a couple of flaming dishes, but I think it's not on the menu anymore (Volcanic Beef), this one was Orange Beef, delicious. I have no doubt the Tiki Tiki cocktail could use some help, but that is the beauty of it, its simple, anyone can really make it and one sip of it and you feel like you are at Lee's - its their basic flavor profile and it is nothing special but definitely hits the spot while dining there if its done right! When I have a chance, I am going to try your version of it!

How does Lee's compare to the Kowloon? I'm assuming they're pretty similar with good food and "less good" tiki drinks?
They are 2 very different places for sure, but both should be on your list most definitely! Kowloon is more loud/crowded, but Lee's is more tranquil and quiet. Visit both if you have the chance but they are at least a 4-5 hour drive apart.

Justin I noticed you used only a few drops of the Elemakule bitters, while the recipe says "two dashes". I know they're strong, so is this a personal choice? I thought a dash of those was usually considered to be one squirt from the dropper (which usually fills about 1/3 the way up when you squeeze and fill it). Just curious. Mahalo, and happy Fourth!
Let me double check on that! I just got back from vacation in Nashville and plan to report on some of the "Tiki" bars and craft cocktail scene there. However I am thinking you are right, "dash" was left in there in reference to Angostura - I hope to streamline/standardize addition of bitters too in either drops or 1/8 ounces (probably 1-2 dashes), thanks!

Great episode! Greetings from Topsail Island where we've already had a couple of gruesome shark bites send swimmers to the hospital. I used to swim the beaches here religiously, but not anymore. I stay outta da shark's house! 😂 I'm ready for Shark Week with my shark head cocktail toppers. I'm working on a libation I'm calling the Topsail Island Terror and another that I'm calling the Surf City Shark Scare. 🦈

Oh no! Maybe they are becoming more frequent?? I never go in that deep anymore, even in the Caribbean, just not my thing to swim in the ocean.
I love the Minimalist Tiki book - that was the first tiki "challenge" I undertook as a home bartender, I made all 30 of their Classic Thirty list. Such a phenomenal resource for people just starting out mixing tropical cocktails at home. Thanks Justin!
I don't buy or read a lot of books, especially on cocktails, but that one for sure is one to have in the collection, its so well done, even if its just sitting on the coffee table its impressive!
Neat cocktail. I live near the beach, so I need to try this one. Fun fact! I live near a beach bar called the Trailer Bar, similar to the home of this beverage. I'm a Midori fan and always have the Banane du Bresil on hand.
Yes, its a light, not over-proofed cocktail so this has the equivalent of about 1.5 ounces of 80proof liquor (most have 2 ounces), so it should be fine!
RIP Brother Cleve, I had the honor of driving him from the airport once, he was really genuine and a super nice guy. My favorite memory from the movie "Splash" is when Darryl Hannah's character needs a name, looks at the Madison Ave. sign and suggests that because it's so pretty. Tom Hanks' character scoffs at her and says "that's not a name". Ahh how times have changed! Mahalo for the episode!
Genuine & nice for sure, something you don't see much of anymore, and he was a legend in the cocktail revival. I definitely have to hear that airport conversation sometime, perhaps in private! lol. I am not big on blondes but Daryl Hannah definitely was one of my favorites, I even saw Jackson Browne in Concert once (her ex), When I meet young people today and they tell me their name is Madison I tell them about Splash and they say "I know my parents named me after that" makes me feel old like I am referring to a 1940s movie lol. I agree, I've had the Total Tiki App at least 8-9 years and I literally refer to it every day or every other day. If you get tired of the same old drinks, you look up what you can and cannot make so you don't default to the same old cocktail and/or discover a new ones! The history and graphics are fantastic too!
Totally agree, a little effort goes a long way.
I love making super juice! I find it lasts for about 7-10 days despite hearing about how it's supposed to last for "weeks", but it really is a game-changer regardless.
Thanks Adam, I agree, I think 2 weeks at best, the problem is I made the episode before the full 2 weeks lapsed, but certainly better than squeezing more than 2-3hours in advance and having the taste diminish so quickly.
@@TikiTriangle Alright I made a batch using your quick-and-easy formula Justin! I'm going to monitor it every day and track how long it lasts until it starts getting that metallic "it's gone off" taste. Usually I use one lime, peel it, weigh the peels and do math based on that to determine how much acid and water I need, but your way is really so much easier, even if its more than I'd usually make in a batch. Mahalo for that!
@@adambhoy Yes, the math should not fail you as long as the digital scale doesn't either, mine weighs down to the 10th of a gram, in fact the batch I used was half, I don't need a liter of lime juice unless its a party, and even then that is a bit ambitious lol.

I never thought of it like that, but I think a painkiller is much stronger and thicker/richer - it's a good alternative for sure! I was impressed they took the time to put nutmeg on top like they do with a Painkiller :D

Thats a good idea, I do put a graphic in the episode with the ingredients and instructions but I am never sure where to put it, so I generally put it just before I start making the recipe rather than at the very beginning or the very end. Thanks!

I agree, the Trader Joe's pineapple is the best. If I can't get that then I'll use the Dole cans just because I like that they're small and don't have to sit around open for long. Usually I'll crack one and pour it into a plastic squeeze bottle if I'm not using it all in one go, which seems to help get rid of some of the metallic taste. How about a link to that cool little plunger/measurer thing you used for the Réal?! I'd LOVE one of those, and didn't know they existed! Mahalo!
I bought it years ago, not sure if they still make it, but they sell them in most big stores in the kitchen section like Target - here is a link to the Rabbit company website: www.rabbitwine.com - the product is not flawless but it saves the step of having to use a spatula to get honey and thick things out of a jigger, especially if you bake!
I am admittedly a hardcore purist of tiki culture and cocktails, but ..... if I'm at an asian restaurant with "mai-tai' or "zombie" on the menu, I'm ordering it. When in rome ;)
Zombie was on the menu too, that was my 2nd choice. It seemed closer to the real thing too. Next time 😂

Thanks! My first SHAG tiki shirt, I bought another, but rarely do I spend that much on Tiki shirts, I usually wait for them to go on clearance at the end of the season for 25-50% off, but I do have a few vintage ones I spent good money on and I keep in good condition!

Yes, it is one of my favorites of all time, but I don't care for the name either, it comes from a doctor who promised millionaires youth by injecting them with monkey hormones. Regardless, its a great drink!
Very nice! I was never a bourbon guy until I did all 30 cocktails on the Minimalist Tiki "Classic 30" list. After drinking all of those, I became a fan of the Eastern Sour. Mahalo!
Nice! Yes I have Matt's book too (he actually wrote a section on Rum in my book). I used the Beachbum Total Tiki App but should have looked at Minimalist Tiki too - great book!
