Hello, in order to not give any movement to Hydraulic Motor, you should use valve which returns the oil coming from the pump to the tank. If the Motor is under load and you need to hold the load then you need to install pilot operated brake and install a counter balance valve.

Hello, there are 2 things here. First, on how much RPM does your pump work? That will give you estimated flow. Second thing is what is torque required at system's max output pressure. If you know these 2 things then you can select a Hydraulic Motor and know its output RPM.

Hello, the small hole on the top is for oil drain line. It is connected to the tank. And no, this motor is not made for reaching upto 5000 RPM. It can perform well till 2500 rpms and upto 350 bars (5000 psi)
