    Mi chiedo perché usare lo xantano se abbiamo fatto un fondo bruno bello sgrassato lucido ben ridotto e denso pronto all'uso.

    Molto interessante ma perché usare L acqua? Capisco che lo xantano deve raggiungere una certa temperatura per agire al meglio ma questo non inficia sul sapore finale poco alcolico?

      se lo metti a freddo in acqua o in un succo come ha fatto lui no. basta stemperarlo prima di scaldare
