Am I reading this wrong or are some of these chords literally impossible to play? The first chord in the left hand has over an octave stretch which the same for a lot of these chords. Didn’t realise Fats Waller was Rachmaninov.

The playing here is wonderful (of course) but the arrangement not so much. The original tune derives a lot of power from the imagery that the words create, and removing them defangs the content of the song. Putting the words aside, the tune itself both melodically and harmonically gains it hypnotic power by staying locked on the e minor cord that goes throughout the entire piece, with the only variable being the occasional C major cord. The dominant is never approached by the Beatles in this tune, which is rather fascinating when you think about it - the tune completely consists of a tonic minor cord, and it's relative major cord on the sixth degree of the scale - that's it. An arrangement like this that employs 2-5-1 cadences and all sorts of other harmonic complexity essentially makes what was originally a very tightly constructed harmonic structure very flabby, and much more common and everyday.
