The reason he is able to get so many skills after turning into a slime is a mix of the unique skills he got Predator, and Great Sage. For example he absorbed a lot of water and got the Unique skill Water Pressure Propulsion. Id def recommend watching more to see if he gets any other type of skills ;)

Another take on why Luke was in the fight at the end is that they were short on pilots. So I think it was out of necessity. Plus, he just saved Princess Leia, so that probably made him look pretty competent. They are rebels so they are organized but short on resources compared to the Empire.

There's a deleted scene where bigs is saying goodbye to Luke on Tatooine and says he's going to join the rebel alliance, so that's why Bigs is saying Luke is such a good pilot near the end of the film. Also another thing you mentioned the CGI, I'm 90% sure you watched the newer version which re released where George Lucas "updated the cgi"
