Lentil Sweet Potato Chili in a Crockpot

Lentil Sweet Potato Chili
Ingredients:
▢1 yellow onion, chopped
▢3 cloves garlic, minced
▢2 sweet potatoes, chopped
▢2 28oz cans of diced tomatoes
▢1 14oz can of red kidney beans or bean of your choice, drained and rinsed
▢1 can corn
▢1 quart (4 cups) vegetable broth
▢1 ½ cups dried lentils
▢2 tablespoons chili powder
▢2 teaspoons cumin
▢salt and pepper to taste
Instructions:
Slow Cooker Directions
Add all ingredients to slow cooker. Mix well.
Cover and cook on low for 8 hours or on high for 4.5 hours
Season with salt and pepper to taste. More chili powder can be added if you'd like. Give it a taste test and if you find it can use some more, go ahead and add, 1 teaspoon at a time.

Interesting Stew. I make a taco "meat" that is all lentils. I was so skeptical, but it was wonderful. It has the texture of meat. Basically onion, garlic and all the Mexican food spices. I need to make that aggain. Will try your chili to add to my lentil ideas.

New subscriber here from NW Montana 😁 I just started making sourdough this year. I started my starter in February 😊. For health reasons I put my starter in the fridge for a couple months, didn't even feed it 😔. It took about a week feeding it daily to get to where it was good and active. When I see my starter floating it's a beautiful site 😁 I've been looking for a good sourdough samich bread recipe so I'm going to make your sourdough samich bread recipe and this one today. And I'll bulk ferment in the fridge overnight. One of our daughters has COVID (ugh) so I'm going to bring her some chicken and dumplings. Can't have that without bread 😁 I'm learning soo much from you so thank you very much for your recipes. I love how you make your recipes look so doable for someone who's new to sourdough. Making bread is fun and therapeutic. Olivia is gorgeous 🥰 I have found that sourdough starter is pretty resilient 😅. Search here on TH-cam "50 ways to kill your starter". It's pretty informative, especially to newbies like me 😁 It's been a while since I've watched it but I think he even added bleach and THAT didn't even kill it 😮

@@BootsandBountyHomestead my bread turned out so good. I really appreciate you. I do have one question. Do I just wash my flower sackcloth that has been flowered just in with the regular laundry or do you save them and put them aside for the next time to use them? I know it's kind of a silly question.
@@carlakellie6674 they will get hard. I hand wash mine in the sink first if anything wet got on them, or shake them out really well, then laundry as normal. Mine are always wet and they get really stiff if I don't get them washed soon. I actually started just putting my boules in the fridge just in the mixing bowl, chill, then shape, score, and bake just because it was ruining all my towels, plus I didn't want to have to deal with all the bowls in the fridge because I do big bakes for shows. You can make it work for you any way you need it to.

Wondering how many ounces of puree you begin with. Thinking I may sub canned puree.
If you are using a standard 15oz can of tomato sauce (I wouldn't use paste), I would have to guess about 15 cans to make the full recipe. That's me just measuring it all out in my head to get the 9-10 qts in the full recipe in the description. You could quarter it and just about 4 cans of sauce and see what that gets you, or half it with 8cans. I would have a couple extra cans on hand if you need to add a little more to it for your liking, or some extra spices in case you'd like to add a little more of those.
@@BootsandBountyHomestead I was thinking the 32 ish now ..cans of puree, might be more cost effective for me, is sauce thicker? I never really understood the difference between the two in commercial can formulas.
@@shervin6711 I don't really know, I've never seen just puree sold, I always thought sauce was puree. You might have to buy one of each and see. The thicker one you wouldn't have to cook as long to thicken. 🤷🏼♀️
10/14/24 - Just a question. Did you bring it to boil and then let the stream of steam go for 10 minutes before timing the 5 minutes and then removing from the heat? Also, I have a Carey/Nesco electric canner and it comes with a 10 pound weight that can be changed to a15 pound weight depending upon the feet above sea level. Would you put the processing timing in as 5 minutes anyway?
@@robyndowning2990 Q1: no, and I never have. Never even heard of doing that until I started watching all these newbie people on TH-cam 😂. My GM and mom never did either, I wasn't ever raised doing it. Q2: if all you have is 10lbs, I would not even do any timing. Meaning, as soon as it comes to pressure, I'd cut it off.

@@veronicacamacho1647 if you are pressure canning, yes. Read the comments, I believe there was a lady that said she waterbaths hers and that you could do with your pot.
I had 3 jars that had cracked eggs showing the whites and yellow after processing. What do I do with these jars? Are they still good?
@@MarthaReid-y1n yes, they'll be fine. I would eat those first, but as long as they are sealed, they should be fine. Just keep an eye on them.

You only need 2-3 inches of water in a pressure canner. You’ve got that water level all the way up which, seems like a risk of water splashing up and blocking your vent. Read the manual again. 😮
Well, if you actually watched it, you would see I'm waterbathing it, not pressure canning it, so go watch it again.....no need to worry about the vent because I don't need it here

I have watched so many videos and yours is by far the best. I just took my loaf out of the oven using your recipe and video and it looks amazing. I do not have a video of making a starter from scratch. I need to do one 😂 but it's simple. Just mix equal parts flour water daily, taking our half on and after the 3rd day until it doubles in size for 3 days in a row. i don't care if you weigh or measure it, your kitchen your rules lol. I don't stick to all the "rules" when I"m cooking anything and it breaks my heart when people make it so hard on themselves trying to follow all the "rules" everyone has come up with. That is what keeps people from doing sourdough, when it's so easy if they will just keep it simple and figure out what works for them. Most people want that "magic pill" for doing it and sourdough has no "magic pill". No patience on trying to figure it out when there's too many chiefs... lol. I'm so glad you commented and let me know how you were doing! That's exciting and great! Keep going now that you have the tools to keep going!
How was the taste?
We sold them at the event but the ones that bought them, I texted them and they said it was great. I asked if it needed anything different and both said no.

Despite following meticulously, my dough loses its shape and goes splat in the bowl. Could it be I am not stretching and folding enough? The bread rises somewhat in the oven and tastes good, though!
Usually that means that you either did too much and broke the gluten, so it has no more "glue" or strength to hold the dough together or it's over proofed. So unless your house is 80+, it shouldn't be overproofed if you followed my timeline. What type of flour did you use? And how old is your starter? And how thick or thin was your starter? Was it at peak? And if that ever happens again, you can always make focaccia with it. If you need to strengthen your starter, feed it, let it peak, stir it down, and let it rise again.
Has anyone tried to can scrambled eggs?
Not that I have ever seen. I really don't know if I would even try that! LOL You can go on FB to several rebel canning groups and search in the group to see if anyone has posted anything about that, but I've never seen it. Never hurts to ask. I mean, It takes a couple mins to cook them so unless there's a point that you have absolutely no way to cook them, that would really be the only reason to "can" them, but I don't even know where to begin to tell you how. They would be so thick in the jar that you would definitely have to pressure can them and then I worry about it ruining them.
I did scrambled eggs in a jar with breakfast sausage. Ate it 2 years after the canning date. The search term is breakfast in a jar if you're looking. The Original Canning Rebels group on Facebook and Rebel Canners group on Facebook are both great groups for stuff like this.😊
