I find that the toothpick method is no good. If the toothpick comes out dry, the cake is already over done. I bake cakes for slightly less time than the recipe calls for and then press the top with my fingers. You want to be able to leave slight indents in the cake, then take it out because it will continue to cook for a few minutes. Another tip is to add, or increase the amount of veg. oil or add some mayo. Good recipe, i love cranberries, Merry Christmas!
